When I'm not on the bench,I am an avid hunter and competetive marksmen for the great state of Georgia.
My favorite things to cook
Wild game, gumbo,stew basically anything that has onions and gravy. However, when yankees come to diner its usually Italian. (Yankees tend to want to stay when fed fine Southern food, so we hide the good stuff).
My favorite family cooking traditions
Cornbread and biscuits go with anything as long as its cooked in cast iron.
My cooking triumphs
My family has a yearly dove shoot and bluegrass weekend on our farm. We feed around 250 people all the hickory smoked bbq chicken, pork and rips they can eat along with a black cauldron full of our 125 year old brunswick stew recipe. The whole family pitches in as all prep is done by hand and cooked over wood fire.
My cooking tragedies
Several years ago I spilled hot grease on my wife's two day old inlaid floor. I still hear about it. She lets me know that His Honor stops at the door.

Southern Grits Casserole
Very good a big hit at the office. I did make a few changes however.I use light velveta rather than cheddar and topped with pilsbury biscuits. I then adjust the oven temp and cooking time to that suggested in the biscuit directions. Serve with homemade jam or preserves on the side.

White Chocolate Raspberry Cheesecake
Used the oreo crust suggested by others. Of the dozen or so cheesecakes I have made for the office staff, this was the most raved about. Thanks. TLM

Bubba's Jambalaya
Very good. To speed things up I used canned tomatoes with onions and peppers already in it. I've even used pheasant instead of chicken for a game dinner, it was a big hit. Thanks.
