Special Buttercream Frosting

Delicious! I have another frosting recipe that I normally use, but after reading all of the reviews for this one, I had to try it. I am so glad I did - it mixes up beautifully and the texture is perfect. If anything though, I may try all butter next time, since this is a buttercream... and I generally prefer to use butter instead of shortening if I can help it. As is, this is a great recipe - I will definitely post an update if I try it again with the butter!

Black Magic Cake

This cake is better than a 5-star recipe! I haven't always had the best results with cake from scratch before, so I braced myself for not-so-stellar results when I tried this for my daughter's 5th birthday. Not only did this cake mix together almost as fast as a boxed cake mix, it baked up beautifully and tastes AMAZING!! It is fluffy, moist, and the best chocolate cake I've ever eaten - the whole family agreed this was absolutely delicious. I frosted this cake with the Special Buttercream Frosting from this site, delicious! My youngest daughter, who just had a birthday last month, has already requested it for her next birthday! I think the highest compliment though, was from my 5-year-old who NEVER eats the actual cake, but rather just the frosting. Not this time though - she cleaned her whole plate and said it was the best cake ever.

Quinoa and Black Beans

YUM, I'm so happy to have found this recipe! I bought a big bag of quinoa from Costco and have been looking for delicious ways to use it up! I agree with the other reviewers who say that 2 cans of black beans is overkill. Unless you want beans to be the main ingredient in this dish, definitely stick with just one can so you get a perfect balance of the quinoa, beans and corn. I also used chicken broth because I don't ever have vegetable broth on hand and I subbed paprika instead of the cayenne since my kids can detect even the slightest amount of heat! As a result, even my two picky eaters loved this recipe, it made a great and filling lunch for us. I'm looking forward to the leftovers!

Simple Beef Flavored Gravy

Wonderful recipe that is great as is, but can also be modified to suit your personal taste. I used 3 teaspoons of onion soup mix in place of the bouillon since I didn't have any on hand, beef stock instead of water (I had some in the fridge I needed to use up before it went bad!) and then left out the onions and this couldn't have been a tastier gravy! This accompanied my meatloaf and mashed potatoes perfectly. My two picky eaters gobbled up their potatoes and said it was the best gravy ever! I do agree with the other reviewers though that there is a specific process to making this gravy. Definitely melt the butter first, then whisk in the flour until slightly browned, and lastly, add the water/bouillon/broth and keep whisking until thickened.

Easy Apple Cider

This is a great recipe, I have been making my apple cider this way for years! It has always been a success. The recipe I use calls for 1/4 to 1/2 cup brown sugar so I've usually stuck with the 1/3 cup measurement. While I think it's just perfect, we all have different tastes so start with a smaller amount of sugar first, you can always add more later. My favorite way to make this is in the slow cooker... it keeps for hours and the whole house smells amazing!! If there are any leftovers, I just let them cool to room temperature and then pour it into a pitcher and store in the fridge. Just heat up mugs of cider individually and it tastes just as good... and fyi, it even tastes good cold!

Watermelon Cooler Slushy

Delicious!! I took another reviewer's suggestion and added frozen strawberries in place of the ice cubes and kept the rest of the ingredients the same, outstanding! My kids loved it too. This made so much that I used the leftovers and made popsicles out of them... talk about a treat... and so much better for you than most of the popsicles you get from the store.

Marshmallow Treats

This is the ONLY way to make these treats... by far the best!! Although this recipe is perfect as is, I like to add a teaspoon of vanilla extract for a little extra deliciousness. I also double the recipe, but keep it in a 9x13 pan... just press it in really good. Absolutely outstanding!

Italian Dressing Mix

The seasonings in this dressing are spot on! I thought it seemed like a lot of salt to me, but made the dressing up exactly as written and it is absolutely perfect! Better than any bottled Italian Dressing I've ever had. I can hardly wait to try it out as a marinade!

Ruby French Dressing

This is the French dressing I have been looking for! I can't tell you how many different recipes I've tried lately. Some were WAY too tart, while others were WAY too sweet. This dressing is a little on the sweeter side, which is what I like, but not too sweet. While this dressing is delicious as is, I chose to add a teaspoon of Worcestershire sauce... perfection!

Homemade Black Bean Veggie Burgers

Great flavor, I didn't even miss the meat! I used 1/2 green pepper & 1/2 red pepper and left out the hot sauce because I didn't have any. I also didn't have any bread crumbs, so I finely ground up 1 cup of old-fashioned oats. After forming the burgers, I placed them in the freezer a few hours before cooking them. They held together perfectly and were absolutely delicious! I will definitely be making these again!

Awesome Slow Cooker Pot Roast

This is my standard go-to roast recipe... I've tried many different versions and none of them compare to this one. The only thing I change is that I don't add the 1 1/4 cups water, you really don't need it. Initially it seems like a really thick gravy, but the roast gives off a lot of liquid as it cooks and makes the gravy consistency perfect! If you like a thinner gravy, then I would maybe add in 1/2 cup or so of liquid, but I would add beef broth instead of water to make the flavor a little more intense. Sometimes I also add a Tablespoon or so of Worcestershire sauce, it just enhances the already wonderful flavor!

Six Week Bran Muffins

These muffins are fantastic! I cut the recipe down to 36 servings, which made just under 3 dozen muffins for me. I only used 2/3 of the sugar called for and they were still plenty sweet for me. I also used butter instead of shortening. I never thought a bran muffin could taste so good - even my 2 little picky eaters love them!

Blueberry Smoothie

Great smoothie! I was looking for a smoothie recipe that didn't call for bananas or orange juice so this was a nice change. I only had vanilla yogurt on hand so I used that and I also used honey in place of the sugar. Nutmeg seemed like an odd ingredient, so I swapped it out with cinnamon instead, which pairs really well with blueberries. Since lemon juice also goes well with blueberries, I added in a splash of that as well. Delicious!

Roasted Asparagus with Parmesan

These were absolutely delicious! I love asparagus just plain steamed, but this really added something to it. In fact, my mom was here for dinner when I made this and she is not an asparagus fan. At least she wasn't until she tried this recipe... she even went back for seconds!

Lemon Pie Bars

These were good, I really loved the lemon flavor! I took the advice of other reviewers and made 1.5 times the filling. Even with the extra filling, I thought there was still a lot of crust compared to the filling. Next time I will either double the filling or half the crust recipe. I didn't have fresh lemons, so I used bottled organic lemon juice and an equal substitution of lemon extract for the lemon zest... perfect sweet/tart lemon taste!

Baked Asparagus with Balsamic Butter Sauce

This is a great way to change up my usual steamed asparagus! I drizzled the asparagus with a little olive oil instead of cooking spray, and I also took some of the reviewer's suggestions and reversed the amounts of balsamic and soy sauce, delicious! I think it would taste good either way though, I like both soy sauce and balsamic, can't go wrong with this one.

Whole Egg Mayonnaise

I really was excited to try this recipe. We are trying to cut out processed foods and I was anxious to ditch the store-bought stuff. I followed this recipe exactly and, while the texture was PERFECT, the taste was not - all I could taste was oil, and my oil was fresh. It definitely needed more salt and some more tang... the flavor, for me, was almost non-existent. I made the recipe again only added in some lemon juice, but it still wasn't right. This is my first attempt at homemade mayo and I have no idea how to achieve the store-bought flavor I'm used to. Maybe a good base recipe to play around with, but I haven't found what I'm looking for yet.

Parmesan Garlic Orzo

This is a well-liked recipe in my home, even my two picky eaters (who've told me it tastes like mac & cheese) love this dish. I've made this recipe with both the 1/4 cup of butter, and with only 2 Tablespoons. Both are equally delicious, we just add more milk (1/4 cup up to 1/3 cup) if using less butter so that it doesn't stick together so much. Like another reviewer mentioned, I also add in more Parmesan (about 1/3 cup) because we love cheese! Be sure to use fresh Parmesan for this, the stuff that comes in a can just isn't the same quality! (And just a little time-saving tip - after buying a big wedge of Parmesan cheese, I bring it home and grate it all up and then freeze it. It won't freeze together, so you can just scoop out what you need. This way, you have fresh good-quality Parmesan with the convenience of canned.) While I definitely prefer the fresh ingredients, if I find myself in a time-crunch I will substitute 1/2 teaspoon of granulated garlic and 1 teaspoon of dried parsley with great results. Oh, and I also leave out most of the pepper, my girls wouldn't eat it otherwise! Great recipe, makes for a quick and delicious side dish!
