Black Bean Vegetable Soup

Very delicious! The only changes I made were to use 2 cloves of garlic and I didn't have canned corn so I used 1 cup of frozen corn. I served it over rice and everyone loved it. I would definitely make this again!

Chicken Salad with Apples, Grapes, and Walnuts

Delicious!! This tastes VERY similar to the chicken salad they make at Arby's, which is exactly what I was looking to duplicate - thanks! As other reviewers mentioned, I left out the Miracle Whip and I just doubled the mayo instead. Such a versatile recipe - leave out what you don't like or substitute with ingredients you do like. You can't go wrong with this one, it's a keeper!

Hot Spiced Tea for the Holidays

This tea is delicious - it has become a family favorite! Very similar to the spiced tea (or Russian Tea) mix, only it uses better ingredients. Just a quick tip for brewing the tea - I brew mine for 15 minutes (perfection) and add just a pinch of baking soda to the hot water, which takes out any bitterness in the tea. Try drinking this over ice as well - equally delicious!! Thank you Carmen for submitting such a wonderful recipe!

Meatball Nirvana

This is a very good basic meatball recipe. I thought it got to be a little bit much though with the Italian seasoning AND the oregano, so I think next time I will leave out the extra oregano and maybe even cut back on the Italian seasoning a bit to suit my taste.

White Chocolate Raspberry Cheesecake

This is delicious! I've had this cake twice now, and the second time I took a lot of the reviewers' advice and used seedless raspberry preserves to save some time. Although it was still good, it is MUCH BETTER when you follow the recipe and use frozen or fresh raspberries. It doesn't take that much extra time and is very worth it, trust me! Oreo cookies definitely work the best for the crust, so tasty and easy. To bake the cake, I lined the bottom and the insides with parchment paper before pouring the batter in, and I wrapped the outside bottom of the springform pan with foil and the placed it in a large roaster, then filled it halfway up the top of the springform pan with boiling water and baked as directed. I had no problem with my cheesecake cracking, it baked up beautifully and had a wonderful texture. This recipe is definitely a keeper!

Classic Hash Browns

A great classic dish - delicious! I made more potatoes than what the recipe called for, but increased the other ingredients proportionately. I used a LOT of potatoes, but they really do shrink up when you cook them, so I could have made even more than I did, I will have to remember that for next time. Like other reviewers have pointed out, the cooking time is definitely longer than listed here, but that could partially be because I used more potatoes. Basically, just keep cooking until they get to the crispiness you like... and the seasonings can really be adjusted to personal taste too, this is a great recipe, you really can't mess it up!

Special Buttercream Frosting

Delicious! I have another frosting recipe that I normally use, but after reading all of the reviews for this one, I had to try it. I am so glad I did - it mixes up beautifully and the texture is perfect. If anything though, I may try all butter next time, since this is a buttercream... and I generally prefer to use butter instead of shortening if I can help it. As is, this is a great recipe - I will definitely post an update if I try it again with the butter!

Black Magic Cake

This cake is better than a 5-star recipe! I haven't always had the best results with cake from scratch before, so I braced myself for not-so-stellar results when I tried this for my daughter's 5th birthday. Not only did this cake mix together almost as fast as a boxed cake mix, it baked up beautifully and tastes AMAZING!! It is fluffy, moist, and the best chocolate cake I've ever eaten - the whole family agreed this was absolutely delicious. I frosted this cake with the Special Buttercream Frosting from this site, delicious! My youngest daughter, who just had a birthday last month, has already requested it for her next birthday! I think the highest compliment though, was from my 5-year-old who NEVER eats the actual cake, but rather just the frosting. Not this time though - she cleaned her whole plate and said it was the best cake ever.

Quinoa and Black Beans

YUM, I'm so happy to have found this recipe! I bought a big bag of quinoa from Costco and have been looking for delicious ways to use it up! I agree with the other reviewers who say that 2 cans of black beans is overkill. Unless you want beans to be the main ingredient in this dish, definitely stick with just one can so you get a perfect balance of the quinoa, beans and corn. I also used chicken broth because I don't ever have vegetable broth on hand and I subbed paprika instead of the cayenne since my kids can detect even the slightest amount of heat! As a result, even my two picky eaters loved this recipe, it made a great and filling lunch for us. I'm looking forward to the leftovers!

Simple Beef Flavored Gravy

Wonderful recipe that is great as is, but can also be modified to suit your personal taste. I used 3 teaspoons of onion soup mix in place of the bouillon since I didn't have any on hand, beef stock instead of water (I had some in the fridge I needed to use up before it went bad!) and then left out the onions and this couldn't have been a tastier gravy! This accompanied my meatloaf and mashed potatoes perfectly. My two picky eaters gobbled up their potatoes and said it was the best gravy ever! I do agree with the other reviewers though that there is a specific process to making this gravy. Definitely melt the butter first, then whisk in the flour until slightly browned, and lastly, add the water/bouillon/broth and keep whisking until thickened.

Easy Apple Cider

This is a great recipe, I have been making my apple cider this way for years! It has always been a success. The recipe I use calls for 1/4 to 1/2 cup brown sugar so I've usually stuck with the 1/3 cup measurement. While I think it's just perfect, we all have different tastes so start with a smaller amount of sugar first, you can always add more later. My favorite way to make this is in the slow cooker... it keeps for hours and the whole house smells amazing!! If there are any leftovers, I just let them cool to room temperature and then pour it into a pitcher and store in the fridge. Just heat up mugs of cider individually and it tastes just as good... and fyi, it even tastes good cold!

Watermelon Cooler Slushy

Delicious!! I took another reviewer's suggestion and added frozen strawberries in place of the ice cubes and kept the rest of the ingredients the same, outstanding! My kids loved it too. This made so much that I used the leftovers and made popsicles out of them... talk about a treat... and so much better for you than most of the popsicles you get from the store.

Marshmallow Treats

This is the ONLY way to make these treats... by far the best!! Although this recipe is perfect as is, I like to add a teaspoon of vanilla extract for a little extra deliciousness. I also double the recipe, but keep it in a 9x13 pan... just press it in really good. Absolutely outstanding!

Italian Dressing Mix

The seasonings in this dressing are spot on! I thought it seemed like a lot of salt to me, but made the dressing up exactly as written and it is absolutely perfect! Better than any bottled Italian Dressing I've ever had. I can hardly wait to try it out as a marinade!

Ruby French Dressing

This is the French dressing I have been looking for! I can't tell you how many different recipes I've tried lately. Some were WAY too tart, while others were WAY too sweet. This dressing is a little on the sweeter side, which is what I like, but not too sweet. While this dressing is delicious as is, I chose to add a teaspoon of Worcestershire sauce... perfection!

Homemade Black Bean Veggie Burgers

Great flavor, I didn't even miss the meat! I used 1/2 green pepper & 1/2 red pepper and left out the hot sauce because I didn't have any. I also didn't have any bread crumbs, so I finely ground up 1 cup of old-fashioned oats. After forming the burgers, I placed them in the freezer a few hours before cooking them. They held together perfectly and were absolutely delicious! I will definitely be making these again!

Awesome Slow Cooker Pot Roast

This is my standard go-to roast recipe... I've tried many different versions and none of them compare to this one. The only thing I change is that I don't add the 1 1/4 cups water, you really don't need it. Initially it seems like a really thick gravy, but the roast gives off a lot of liquid as it cooks and makes the gravy consistency perfect! If you like a thinner gravy, then I would maybe add in 1/2 cup or so of liquid, but I would add beef broth instead of water to make the flavor a little more intense. Sometimes I also add a Tablespoon or so of Worcestershire sauce, it just enhances the already wonderful flavor!

Six Week Bran Muffins

These muffins are fantastic! I cut the recipe down to 36 servings, which made just under 3 dozen muffins for me. I only used 2/3 of the sugar called for and they were still plenty sweet for me. I also used butter instead of shortening. I never thought a bran muffin could taste so good - even my 2 little picky eaters love them!

Blueberry Smoothie

Great smoothie! I was looking for a smoothie recipe that didn't call for bananas or orange juice so this was a nice change. I only had vanilla yogurt on hand so I used that and I also used honey in place of the sugar. Nutmeg seemed like an odd ingredient, so I swapped it out with cinnamon instead, which pairs really well with blueberries. Since lemon juice also goes well with blueberries, I added in a splash of that as well. Delicious!
