Fresh Fruit and Yogurt Ice Pops

Delicious! I had some vanilla yogurt and some fruit in the fridge, both of which were going to spoil in the next couple of days if I didn't use them up, so this was the perfect recipe. It took me no time to mix them up and get them in the freezer. I had the banana out and ready to put in the recipe and forgot it - but they still tasted amazing. I am excited to try out different fruits. What a great summer treat to have on hand!

Coconut Oil Coffee

As written, I did not care for this recipe...it was drinkable after I added 2 teaspoons of sugar to it. I am someone who likes strong black coffee with no sweetener, but when I tasted this recipe, it really hit my taste buds wrong - hence, the added sugar. I guess I like my plain coffee unsweetened but expect my "lattes" to be a little sweet :) Even with the added sugar, however, I don't think I'll be making this coffee again - which is too bad, I had high hopes for it!

Chef John's Ham and Potato Soup

Great recipe! I didn't have smoked ham, only packaged diced ham so I used that and I thought it worked out just fine. I kept everything else the same - the recipe is a winner as is! Next time, however, I think I will increase the flour to 1/3 cup so it is a little thicker. This soup made a wonderful lunch on a cool Sunday afternoon - I just wish I would've doubled it so there would be more leftovers for tomorrow!

Spinach Tomato Tortellini

Delicious! I didn't have the diced tomatoes with onions and garlic on hand, so I used a plain can of diced tomatoes and added in 1/8 teaspoon onion powder and used 4 cloves of garlic. Next time I would use 5 or more cloves. I followed the recipe exactly for the remaining ingredients - a very satisfying meal that tasted like I spent a lot more time in the kitchen cooking it than I actually did! It is definitely a quick and easy meal. This would also be great if you changed up the pasta - my kids are not huge fans of tortellini so next time I might try penne pasta.

One Bowl Buttercream Frosting

Heavenly is the first word that came to mind when I tasted this frosting! The reviewer who said it had good mouth feel wasn't kidding - it has a super silky texture and the flavor is outstanding! I frosted a chocolate cake tonight and cannot wait until tomorrow to try it... my mouth is watering! This is now the ONLY chocolate frosting recipe I will use.

Best Tuna Casserole

Good base recipe! I left out the mushrooms (family doesn't like them) and I used my homemade cream of soup mixture in place of the 2 cans cream of mushroom soup. I also cut the tuna down to only 1 can, that was plenty for me. Chicken substituted instead of tuna works really well, too. I have made this recipe so many times, it is a family favorite for sure! I forgot the potato chips the last time I made it and it was still good - and I guess I saved a few calories in the process :) One other thing I do is, during the last minute of cooking the noodles, I add in the frozen peas to the pot to cook them a bit. Before doing this, my daughter always complained of the icky texture of the peas and this seemed to solve the problem - it is now one of her favorite meals!

Easy Meatloaf

This was pretty tasty! I didn't have an onion so I substituted 1/2 teaspoon of onion powder, & I also didn't have any bread crumbs so I ground up 1 cup of rolled oats. To push it one step further, I grabbed a handful of baby spinach and chopped it up like you would parsley and added that as well. It doesn't really add flavor to the food, but it sure does pack in a little more nutrition. I also took some of the reviewers suggestions and added in some Worcestershire sauce. The end result? A meatloaf my kids LOVED and I love the fact that there's oats and spinach in it. This was a great base recipe that was easy to make subs/additions to. Next time, I will take some of the other reviewers suggestions and saute a chopped onion (and some garlic) in butter and then add that to the meatloaf. The onion powder was good, but nothing like the taste of a real onion. The one thing I noticed when I first mixed everything together was that 1 cup of milk seemed a bit much - it was a very sloppy mixture that I couldn't mold into a loaf in the beginning. Maybe it was the oats I used instead, but once it sat in the fridge for about a half an hour, it firmed up better. Next time I will probably only add 3/4 cup milk, especially if I need to bake it right away. Also, this needs to cook longer than an hour. Based on other meatloaf recipes I've made, 1 1/2 lbs ground beef needs 75-90 minutes to bake in order to cook all the way through. I am making this into meatballs next time!

Caesar Salad Supreme

Not that this recipe needs another rave review, but WOW - delicious! I am always ordering Caesar salads in restaurants, but have never attempted to make my own dressing at home - until now. What I like about making this myself is that I can control how "fishy" the dressing tastes, unlike when I'm at a restaurant (I've had some pretty bad salads because of that). I followed the recipe exactly, except that I didn't have anchovy fillets, but I did have paste - I just used a dab of it. And thanks to the reviewer who suggested thinning it out with some half & half (I used whole milk)... it was PERFECTION! I had no idea Caesar dressing was THIS easy... I'm anxious to try a Caesar chicken wrap now - I may never need to eat out again!!

Blueberry Cream Muffins

Delicious muffins - great recipe! I followed the recipe EXACTLY and they turned out perfect - all except for the 2nd pan because I forgot it in the oven. That's right - a whole batch of muffins ruined! Savoring the tray that I remembered to take out in time and contemplating when my next batch will be! Looking forward to trying this batter recipe with other fruits as well - my kids have requested strawberry muffins next time!

Our Favorite Balsamic Vinaigrette

Excellent recipe! I hate buying bottled dressing, so I love coming across a recipe that's so easy and fast to put together and tastes AMAZING! I did not have a shallot on hand and was mixing it up in a hurry so I used granulated garlic instead of fresh and a pinch of onion powder - delicious! I can't wait to make this again, only try the fresh garlic in it. This would also make a great marinade for chicken.

Hot Pink Lemonade

Delicious! Loved the taste and especially the fact that I didn't have to add in food coloring to get the pretty color! The only thing I did differently was to add the frozen blueberries to the simple syrup after I took it off the heat and let them warm up a few minutes. Then I poured everything into the pitcher through a strainer. I will definitely be making this again!

Tortellini Bacon Broccoli Salad

I knew I was going to love this recipe from the moment I first saw it and now, after making it today, I am not disappointed. I followed the recipe EXACTLY, which I almost never do, and wouldn't change a thing. I've already eaten 2 bowls of this and I only made it not even an hour ago! So I can't imagine how much better it's going to taste once it's had a chance for the flavors to mix a little more in the fridge overnight! This one is definitely going into my recipe box. Thanks!!

Homey Chicken and Rice Casserole

This was not a bad recipe, but not one I'll probably make again. I thought it was a little bland and needed something extra that I couldn't put my finger on. I also didn't love the sour cream, I would've rather doubled the cream of chicken soup.

Johnny's Spice Rub

DELICIOUS!!! Made as is, the recipe is awesome. Add 1 Tablespoon of Onion Powder to it and it's PERFECT. I kept all of the other measurements the same except I cut the black pepper down to 1 Tablespoon or my kids would think it was too spicy. I can't understand why everyone was cutting back on the cumin, I thought 1 Tablespoon was perfect and didn't overwhelm the flavors at all, even before I added in the Onion Powder. Can't wait to try this on chicken!!

Beer Margaritas

YUM! I do NOT like beer, but in this recipe I can't even taste it - yet it gives an added flavor to the margarita that just makes it even better! I used MGD beer and Tequila Silver - perfect! I would not change a thing about this recipe - it's not overly sweet which is perfect for me. To store the leftovers, I just poured the rest into 8-oz mason jars and put them in the freezer to enjoy later!

Spinach and Bean Casserole

Not a bad dish, both my husband and I liked it, but not good enough to save the leftovers. Also, my girls (3 & 5) did not care for it at all, so it is probably not a dish I would make again. I thought the fennel seed was a little overpowering, so I wish I would've gone with my initial instincts and just added some basil and oregano instead. I think that the fennel was the main turnoff for my kids, as well. If I ever do make this again, I will switch out the herbs and serve it as a side dish rather than a main dish.

Soft-N-Fluffy Hamburger Buns

These buns are so much BETTER than any buns you will ever buy at the store. I have always been intimidated to make my own hamburger buns because it always seemed so difficult and time-consuming... I was wrong. Since I've started reading the ingredients list of the store-bought version (which is downright scary, by the way), I decided to try making them myself and these are so easy and delicious I won't go back to buying them any more. I follow the recipe exactly and then give them a quick brush with some melted butter after they're done baking, which makes them very soft. I don't understand some of the comments that they don't hold up to a juicy burger, because these most certainly do - even sloppy joes! Love Love Love this recipe!

Tartar Sauce I

I wanted to love this recipe, but should've gone with my instincts (and some of the reviews of others) and used dill pickles instead. I am not a sweet pickle fan, so guess that was my fault! :-) Next time, I will use dill pickles and some pickle juice instead of the lemon juice. Also loved the suggestions of turmeric and some dill! While this recipe was okay, I definitely plan to make it again, only with some changes.

Hot Pepper Cheese Ball

I followed the recipe, including the full amount of Worcestershire sauce, and this was the best cheese ball I have ever tasted! The only minor changes I made were to divide them into 2 cheese balls (and they were still pretty big at that) and I coated them in chopped almonds since I don't like pecans. I made this recipe for Thanksgiving this year and it was an absolute hit! Not only did all of it get devoured, but I had several requests for the recipe. As others have noted, though, this is not a HOT cheese ball, but that is how we all liked it. If you want it hotter, I would suggest adding in some hot sauce to suit your taste when mixing it up. If all you've ever had is a cheese ball you've bought from the store, then you are missing out - you NEED to make this recipe, you will not be sorry! My only regret is that I didn't take a picture of them before they were eaten... they were picture perfect and sooo easy to make!
