I have made this twice and my family LOVES it! The first time I made as written and it was a five star bread. The second time, I made it a bit healthier by following Sara Jane's recommendation of replacing the oil with applesauce, and I also cut the sugar to three cups (two white and one brown) because that was all I had in the house. My family liked it even better that way! We've eaten the full batch (yes, three loaves worth) in just a week! My kids love it spread with peanut butter. This makes great muffins, which cuts down the baking time and makes for a more portable snack. This is the only recipe for pumpkin bread I will ever use. Thanks Cheryl!
