Manjar (Dulce de Leche) from Scratch

This was my first attempt to make Dulce de leche from scratch, and I am very pleased with the results. A few notes: 1) This takes time, but if you cook it on low, you only need to check in on it occasionally. When I made it, I cooked on low and it took about 4.5 hours, but at such a low heat I only needed to check in on it about once every half an hour. That means that it is not a hassle if you are doing other chores around the house. 2) It is very important to strain the dulce de leche before it is eaten or stored. The purpose of the baking soda in this recipe is to keep the milk from coagulating. That being said, there will be some small amount of coagulation at the top, and these weird bits will interfere with the other smooth, delicious experience. I will note that in the past I have made dulce de leche by boiling the can of sweetened condensed milk, and the raw ingredient approach produces a far superior result.

Chocolate Truffle Cookies

Wow! If you like chocolate, these are the cookies for you! I have made these cookies several times, and have consistently had very good results. On a few occasions, I have omitted the 1 cup of chocolate chips stirred in at the end, and the results are still delightful. Of note, I believe that the step where the eggs are beaten is very important - that is what gives the cookies some of their volume. Otherwise, I think it would be difficult to mess these up!

Slow Cooker Lentil and Ham Soup

Mmmmm, this soup is so simple and satisfying. I originally tried this recipe to get rid of left-over ham, but now I am making it all the time! It is so healthy, extremely inexpensive to make, and the leftovers are very good.

Irish Cream Liqueur II

I made this last year and my friends liked it so much, that we centered a whole party around the irish cream. Everyone is asking me to make it again this year. Absolutely delicious and an excellent value.

Grandma's Gingersnap Cookies

These cookies are mediocre... there is little flavor and the texture leaves something to be desired. I followed the recipe exactly, and although the cookies look pretty, they have very little flavor. In addition, these cookies were very brittle, whereas I expect gingersnaps to be somewhat soft. I will have to try another recipe next time.

Caramel Sauce

This caramel sauce turned out as said, however I did not like the taste of it. It reminded me of Cajeta with goats milk. I will probably just buy store bought from now on.

Cinnamon Rolls III

These were the best cinnamon rolls I have ever tasted! My friends and boyfriend raved about these and now I am requested to make them every week. I used magarine spread for the inside of the rolls, which spread easier than stick butter.

Apple Crumble Pie

This pie is amazing and very simple to make. I used to not like apple pie, nor had I ever made one before until I used this recipe to make one for my boyfriend. He loved it, and so did I! Using fresh apples in a pie makes an incredible difference... I reccomend Granny Smith for a little tart flavor. I make this pie regularly now for gifts, special occasions, and everytime I go to visit my father :)
