Orzo and Tomato Salad with Feta Cheese

OMG ... this was fantastic !!! I changed it up abit ... I bought a small container of cubed feta with olives marinated in oil to the orzo. I chopped green and black olives, artichoke hearts (4 tbsps), grape tomatoes and fresh parsley. I used about 1/4 cup of Kraft Signature Balsamic Vinaigrette for flavor. Rave reviews from everyone !!!

Creamy Pesto Shrimp

AA ++ recipe !!! Used angel hair pasta instead of linguine ... added green (not red) pesto to the sauce and twice the amount of freshly grated parmesan cheese than suggested. A real hit with everyone ... would be delicious with scallops,crab or lobster ...

Tiramisu II

Very delicious dessert and worth every minute of the prep time to make it !!! Changed it up abit - brushed the coffee (1 cup) and rum (4 tbps)on the ladyfingers and lined a springform pan with them. Alternated the custard and whipped cream and used a high quality grated dark chocolate to top the cake. Very delicious and not too sweet !!!

"Very good recipe" says the crew... I did make a few changes...used whole boneless/skinless chicken thighs and did not fry them first. I baked the whole meal in the oven ...great recipe - THANKS !!!

Garlic Cheddar Chicken

Absolutely delicious...I doubled the recipe to feed my hungry fishermen !! I changed it up a little - used boneless/skinless chicken thighs and also added some Italian spice to the bread crumb mixture. Received rave reviews from the guys !! Definitely a keeper !!

Irish Soda Bread

I needed a recipe for tomorrow evenings St. Paddy's Day party...just pulled the first two loaves out of the oven. Rave reviews from my family !! Changed it up a little - after reading the reviews, only added 2 cups of raisins (1 cup golden & 1 cup regular seedless raisins ). I divided the soft dough into two and put them in loaf/bread pans. I sprinkled the caraway seeds ( maybe 1/4 teaspoon/pan ) on top of the dough and then did the same with a little flour. They were in the oven for 45 minutes and turned out fabulous... a real yummy recipe...thanks...

Irish Chicken and Dumplings

Delicious with the cream of chicken soup for a base. Changed things up a bit..used boneless/skinless chicken breasts and thighs and left the pieces larger. I added salted herbs and spices, fresh veggies as well as added my own homemade dumpling recipe. A real scrumptious Winter dish...thanks...

Apple Crisp II

Very good dessert on a cold Winter day !!! I made 1 1/2 times the topping - which was crunchy (awesome !!) I also added extra cinnamon and nutmeg into the topping before baking ... simply delish !!!

Mexican Rice III

WOW...what a fab recipe...up here in Canada we are not big Mexican food eaters. The only variance that I made to this recipe was as I had no jalapeno peppers, I added dried crushed red peppers and also added some finely chopped yellow and red peppers along with the green ones. A real keeper !!!!

Chicken Enchiladas I

Just a fab recipe...up here in Canada we are not big Mexican food eaters - needed some great recipes for my daughter's birthday party....the only variance that I made in this recipe was to use 1/2 can diced tomatoes and no water instead of the tomato sauce - definitely a keeper !!!

Cocktail Meatballs

Just delicious....served this wonderful dish just a few days ago for New Year's Eve. I doubled the recipe and made some slight modifications - used 1 can of regular cranberry sauce and 1 can of cranberry/clementine sauce...also added my own homemade chili sauce instead of the canned variety. I also added green onions to the meat before cooking. Suberb...thanks....
