Garlic and Tomato Tilapia

Kudos for this one. Since you can't find any good tomatoes this time of year, I used a can of Italian diced tomatoes (drained)I also used lite sour cream. This is a great week night recipe: quick, simple ingredients, healthy and tastes great!!

Brookville Hotel Cream-Style Corn

Herb and Chicken Pasta

This has all the elements of a great meal. 1--it's simple 2--it's quick to cook 3--ingredients are almost always on hand. It also tastes great! I did add a little more broth since some of the reviews said it was a little dry. Once it was done simmering, I removed the chicken and added the pasta to soak up the flavors in the sauce. I also added a couple handfuls of fresh baby spinach to make sure we get our veggies. It was great!

Chicken and Asparagus Bundles

Wonderful dish. My only change was to add a touch of cream cheese to the chicken with the asparagus. I did this by mistake (getting this recipe and another one confused). but it worked. another great way to make fresh asparagus.

Yummy Roll Ups

Be generous with the cream cheese. I used the garden vegetable light cream cheese and rolled the ham around half a pickle. yummmmm. i do recommend refrigerating before slicing for less mess. You have to use a good quality ham. If it's too mild it will be overpowered by the cream cheese.

Easy Banana Bread

very good bread. i made a few changes just to make it a little healthier. I subbed one cup of the flour for whole wheat flour. Used only 2 cupS sugar and 1/2 of it was brown sugar. I subbed half the shortening for butter and I also only used 3 eggs because that was all i had. i added in just a small handful of pecans. No one can tell it has healthy changes to it. next time, I will use 1 1/2 cups whole wheat flour and egg beaters for the eggs.

Salsa Chicken Burrito Filling

I put my frozen chicken in the crock pot and covered it with plenty of enchilada sauce(out of tomato sauce) and then the salsa and other seasonings. I use my own taco seasonings I make (taco seasoning I) which works wonderfully because you control the amount of salt. Other than the enchilada sauce, I followed the recipe. Cooked the frozen chicken on hi for 4 hours, then it turned to warm until I got home. I shredded the chicken, wrapped it in tortillas, sprinkled with cheese and then poured the left over sauce from the crock pot over the enchiladas...nothing was wasted. Good...Quick...Easy!

Chocolate Ganache

Very rich and decadent. If you're going to make this, you have to use a good quality chocolate or the true taste and texture will be off. I used this as a filling for a torte. In order to do this, after melting the chocolate with the cream, I left it out to come to room temperature. Then I refrigerated it for 30-45 minutes. I used my hand mixer and whipped the ganache into a rich and creamy filling. This changes the color of the ganache from a dark chocolate to a light chocolate.

Tuna Noodle Casserole I

My cabinets are almost bare and I didn't want to go to the store. So, I found this recipe and decided I could make it work with what I had. I added some seasoning salt in place of the regular salt. Used some extra milk in order to thin out the cheese sauce. I also used whole wheat elbow macaroni. I steamed some fresh broccoli florets and used that in place of the peas. And I used a 12 oz can of tuna. This is a decent meal when your short on time. In the end, it is still just a tuna casserole. Good but not spectacular.

very quick and easy for a snack or for a meal. i've made these several times and i almost always make it different. fill it with whatever toppings we feel like at the time and dip it in pizza sauce and my husband even likes to use ranch.

Slow Cooker Chicken Creole

we love spicy foods and this one was great. i placed my frozen chicken breasts in the crock pot and seasoned genourously then added the other ingredients (except celery) plus a can of rotel and small can of tomato paste. i did add an extra jalapeno for a little more of a punch. this cooked on high for 6 hours. when i got home it was perfect. the chicken done but not dry, shredded easily. served over rice. delish!!!!

Black Pepper Beef and Cabbage Stir Fry

Really good. We both loved it. Added our own vegetables. A bag of cole slaw mix saved time over shredding the cabbage, broccoli, mushrooms and water chestnuts and one thinly sliced onion.
