Pumpkin Coffee Cake

Loved the texture of this cake but couldn't taste the pumpkin flavor. Will up the amount of pumpkin next time and add more pumpkin spice. This only took 35 min. to cook in my oven.

Fresh Strawberry Scones

Glad I read the reviews first. I used 1/3 cup half and half instead of the 1/2 cup called for and it worked fine. Really great flavor probably because of the fresh strawberries. I think I still like the Simple Scones recipe on this site better even though that recipe calls for an egg and more butter. I might make this again.

Simple Scones

This is an excellent recipe! I used Smart Balance 50/50 butter blend in place of the butter and craisins in place of the raisins. Also convection baked these and they took about 12-13 minutes. Thanks so much for sharing such a great recipe.

Jay's Signature Pizza Crust

Excellent recipe and it makes a huge 16" crust that is 1 1/2 inches all the way around the outer edge. I convection baked a pizza at 425 degrees for exactly 15 minutes and it was perfectly cooked. I think this could be split into two thinner crusts and will probably try that next time. Thank you for this great recipe.

Lime Chicken Soft Tacos

This is really a restaurant quality recipe. I kind of doubled the ingredients to make a marinade. Here is what I did: I marinated a package of boneless skinless chicken breasts in a plastic zip lock bag in the following: 1/4 cup red wine vinegar, 1/8 cup extra virgin olive oil, juice of 1 medium lime, 1 tsp. sugar, 1 1/2 tsp. dried oregano leaves, 1/2 tsp salt, fresh ground pepper to taste, and 1/4 to 1/2 tsp each of garlic powder and onion powder, to taste. Marinade this for 2 hours then grill chicken breasts till done. Serve over chopped iceberg lettuce and diced vine ripe tomatoes and shredded monterey jack cheese. Serve with Hidden Ranch Spicy Ranch salad dressing. Hope you all enjoy this as much as we do!

Cinnamon Coffee Frosting

Put this on top of a boxed brownie mix and it took the brownies over the top! Use less milk than called for - used about 2 TBSP. Have made this many times and always have people ask for the recipe!
