This is really a restaurant quality recipe. I kind of doubled the ingredients to make a marinade.
Here is what I did: I marinated a package of boneless skinless chicken breasts in a plastic zip lock bag in the following:
1/4 cup red wine vinegar, 1/8 cup extra virgin olive oil, juice of 1 medium lime, 1 tsp. sugar, 1 1/2 tsp. dried oregano leaves, 1/2 tsp salt, fresh ground pepper to taste, and 1/4 to 1/2 tsp each of garlic powder and onion powder, to taste.
Marinade this for 2 hours then grill chicken breasts till done. Serve over chopped iceberg lettuce and diced vine ripe tomatoes and shredded monterey jack cheese. Serve with Hidden Ranch Spicy Ranch salad dressing.
