Cream of Tomato Soup

I made this with homemade tomato juice. Very good. I did substitute corn starch for the flour which shouldn't have affected the flavor. I also used almond milk, just one cup and added some cheddar cheese. Thanks for a great recipe.

Cindy's Awesome Clam Chowder

This was very good. I added salt and pepper while potatoes and carrots were cooking, but this was a little bit too salty. I would eliminate that step next time. I am lactose intolerant, so used lactose free milk instead of the half and half. It was still wonderful.

Eggplant Croquettes

I did not care for these. I love eggplant, but I thought the sharp cheddar overshadowed the flavor of the eggplant. If I were to try making it again, I definitely would cut back on the cheese and possibly eliminating it.

Cabbage, Potato, and Tomato Soup

This was very good. I thought it needed a little more "depth" of flavor. I added 1 to 1 1/2 tsp turmeric, but felt it still needed something. I added a package of Uncle Ben's Brown Rice and Barley medley. This gave it a little bit of a chewy texture. It didn't last very long with these two additions.

Creme de Menthe Chocolate Chip Cookies

I added nuts to these and they are delicious! I agree they need to bake a little bit longer than 10 minutes.

Special Irish Beef Stew

I didn't have Irish beer so used reg. beer, forgot the garlic, had to sub tomatoe sauce for the paste, and chicken broth for the beer. I also added 16 oz of peas. In spite of the changes-stew was delicious. Would definately make again.

Haddock Au Gratin
