Light Oat Bread

To the reviewer who did not like this loaf because it was too light and smooth textured...I had run out of bread and made this loaf except I had no rolled oats. I only had pin oats (found in World Markets) so I used that instead. The loaf turned out fantastic! It was still super light and fluffy, but it had that wonderful pin oat texture to go along with it. So if you prefer a bit of texture, try pin oats instead because they do not "disappear" when baked like the rolled oats do. I loved this loaf and will make with rolled oats the next time as well.

Peanut Butter Vegetable Chicken Soup

The flavor was ok. I am still not sure if I like it enough to keep trying. The main problem I have with this is that even though I follow the recipe to the letter, my soup always ends up gritty after I add the peanut butter! I've used 3 different brands of peanut butter and all 3 times the peanut butter never seems to blend in all the way and it separates, giving the soup a slight grittiness to the broth. I'd say the flavor is ok if I could just get past the texture.

Asparagus and Mushroom Quiche

Super recipe. I've tried it as written and modified it occasionally based on what I've had on hand. Most of the time I use 1/4c milk instead of the half and half and I increase the feta to 1/2c while decreasing the shredded cheese to 1/2c. Hubby likes about 1 tsp of red pepper flake mixed in and then french fried onions sprinkled on top the last 20 minutes of baking so I usually throw those on there too. However, this recipe as written is excellent as well!

Garden Fresh Tomato Soup

We just now finished this soup and it was excellent! I did have to make a few changes due to what I had available and personal preferences. I used dehydrated onion flake instead of fresh onion (2 TBSP), and added 2 TSP dehydrated minced garlic as well as 1 - 2 TSP Balsamic Vinegar just to kick up the flavor a bit. If everyone likes spicy food, then I add 2 TSP red pepper flake, but if not, then I just add a dash of Chipotle Tabasco and a dash of Frank's Red Hot to taste per bowl. I add everything to the blender after cooking and puree for 2 minutes before proceeding with the directions for the roux. To die for!!!

Spicy Chipotle Black-Eyed Peas

I made this recipe exactly as written and we all LOVED it! Yes, it is spicy...but that should be expected as the description DOES say it's very spicy (honestly, have you ever had a chipotle pepper that wasn't)? This was an excellent dish to have on a very cold day. Even my picky 14 year old daughter ate it up! I would not change a thing with this recipe and urge you to try it if you like spicy foods.
