We just now finished this soup and it was excellent! I did have to make a few changes due to what I had available and personal preferences. I used dehydrated onion flake instead of fresh onion (2 TBSP), and added 2 TSP dehydrated minced garlic as well as 1 - 2 TSP Balsamic Vinegar just to kick up the flavor a bit. If everyone likes spicy food, then I add 2 TSP red pepper flake, but if not, then I just add a dash of Chipotle Tabasco and a dash of Frank's Red Hot to taste per bowl. I add everything to the blender after cooking and puree for 2 minutes before proceeding with the directions for the roux. To die for!!!
