Mushroom Beef Patties

This is also a great make ahead recipe. I make the patties and then freeze them so all I have to do is defrost and fry. I double the soup and add a touch of beef bouillon and serve it all on a bed of rice.

Tater Taco Casserole

I had to make this recipe twice to even get a taste! I made it the first time on a night I was gone and there were no leftovers. My hubby and boys just loved it. I only use 1 lb hamburger when I make it, too.

Peanut Butter Cocoa No-Bake Cookies

My kids love these cookies and I love how quick and easy they are to make. I increased the cocoa to 1/2 cup and used 1 cup chunky peanut butter instead of the separate peanut butter and chopped peanuts. I have it on hand much more often! I also used my ice cream scoop to make the cookies really fast. I just spritz it with a touch of cooking spray first.

Fluffy Potato Casserole

Quick and easy! Light and fluffy! I used leftover Yukon Gold mashed potatoes from Sunday dinner and, following the advice from another reviewer, doubled everything except the cheese (I used Neufchatel), onion and egg. I didn't have fresh onion so I used 1 1/2 teaspoons of onion powder which worked great because my kids don't like to see onion. I also didn't put the french onions on the top. I did forget the flour but I don't know that it made a difference. I also added about 1/3 c real bacon chunks. I know that made a difference! My 13-year-old son had thirds! I think it would be good with green onions or a touch of parsley to add color.

Individual Meat Loaves

This smelled so good as it was baking and then tasted great when it came out! I baked it all in one glass bread pan. We all had seconds. It was a lot moister and crumblier than the one we usually have. I might try adding the glaze later in the baking (in one pan) because it got a little like fruit leather -chewy. I think I will try it next time in individual loaves to see what that is like.

Creamy Artichoke Pasta

WOW!! I couldn't believe how good this recipe is! I was wary with the low-fat stuff in it but it was great. My husband accidentally got me marinated artichokes when I just wanted ones in water and now I am glad he did! I used bowtie pasta and didn't use the full 12 ounces. It was so good I immediately ran a taste to my neighbor who also loves artichokes. She also gave it five stars. I can't wait to taste the leftovers tomorrow. Think I'll add some fresh tomatoes...

Homemade Hashbrowns

This is a really nice way to liven up leftover mashed potatoes! I added a touch of parsley for color. I found that they browned best if I let them sit in the pan with a cover on them on a medium high heat. Tasty!

The flavor was really yummy. However, my sauce didn't thicken and also seemed to separate. I don't know if it was the temperature I was cooking at or if I didn't wait long enough to thicken.

Chicken Florentine with Rigatoni

This recipe is exactly what it says it is, a light tomato cream sauce. It is a very subtle blend of flavors. I almost felt like it should have more flavor. I did not have the fresh basil so I used about 1 teaspoon of dried. The red pepper gives it a nice zing. I would be curious to see how heavy cream would taste in it instead of half and half. My husband said it is a do again dish. He thought it might be good with veal or sausage instead of chicken or with pine nuts added to it. My picky kid did have seconds and he didn't even avoid the spinach!

The Best Double Chocolate Chip Cookie

This cookies were great! My kids just about tackled me to keep me from taking them to my activity. After reading the reviews about flat cookies, I used parchment paper on my cookie sheets, cut the temp back to 350 and baked for 10-15 minutes watching for the cracks to appear on top. I added just a touch more flour (1/4 cup, maybe) and just dropped the dough on the sheets rather than rolling it. They are a flat cookie but not abnormally so. They came out square because I put them too close together so I would separate them a bit more next time. There will definitely be a next time!

Pesto Chicken Florentine

We liked the recipe. I used radiatore pasta and chicken fingers cut into bite sized pieces. I had a colander FULL of spinach and I still would do more. I also seasoned my chicken with seasoned salt.

Basil Cream Chicken

I liked this but I put too much dried basil in and had to spend some time to get it out. It would probably be a lot better with fresh herbs. The chicken turned out really yummy. I used seasoned bread crumbs.

Vanilla Glaze

At first I thought that I had misread the liquid measurements because it was so thick. Then I read the other reviews and adjusted the liquid accordingly. I also added about 1/2 teaspoonful more of vanilla because it tasted so sugary to me. I used this as a glaze for cinnamon rolls. My boys and honey sure liked it!
