Angel Hair Pasta with Shrimp and Basil

I made this meal for my parents the other night and they loved it. I used 1 can of stewed tomatoes and about 7 or 8 fresh tomatoes. I used more fresh basil and parsley than was called for and instead of putting the shrimp into the sauce I put them on top of the pasta and sauce after they had been served so that their flavor really stood out from the rest of the dish. The parmesan was a definite plus!

Sherry Apple Pork Chops

This recipe was a hit with my husband and I. It was easy to make and the pork chops were quite tender. I am sure that any kid would enjoy this recipe also because of the brown sugar and apple.

Simple Artichoke Dip

This recipe did not turn out very well. I ended up with a very greasy mess and had to throw it out. I think the problem was I used a brand mayonnaise that has different oils than regular mayonnaise.

Berry Trifle

Delicious, super easy and a huge hit with my husband's family. I took the advise from other reviews and used amaretto instead of praline liqueur and angel food cake instead of pound. Also, I didn't use the condensed milk, I just made the vanilla pudding and mixed it with the still partially frozen whipped topping.

Health Nut Blueberry Muffins

For a healthy treat it is quite delicious. I had to bake for just over 20 min. I think because I used frozen blueberries and a stone muffin tray.

Lentil Lemon Soup

I highly recommend, the dark greens are so tasty in this soup unfortunetly the lemon really over powered the flavors, because of this the soup tasted better the next night. I'll make again with half the lemon suggested.

Hearty Tuna Casserole

Very Tasty! Due to what I had on hand here is what I substituted and it still turned out great: bowtie pasta, spinach, yellow onion, cheddar cheese and I added some cottage cheese as someone else suggested. Looking forward to the leftovers.

Kielbasa and Potato Bake

Tasty! I grew up dreading kielbasa night, but I married a man that loves this stuff. I finally found a recipe that we both enjoy. I cooked the sausage in a pan to cook off some of the fat and brown it a little. I will use 3 potatoes next time I make this.

Okra, Corn and Tomatoes

I have never used file powder before and chose to make this recipe without. Since it's august, the 3 main veggies are in season so I used fresh. It was very good but was missing just a little something. I'm now going to keep my eye out for file powder (I'm in CA) and give this another try if I ever find it.

Irish Lamb Stew

Everyone loved this. This pleased 6 adults, one of which had never tried lamb before. The only adjustment I made was reducing the amount of bacon to 3/4 lb. and I used 2 1/4 lbs. lamb steak.

Very Good! I followed the recipe except for the following...used 1 qt. beef stock with 1 qt. water and fresh diced tomatoes instead of canned. My 2 year old even gobbled it up!
