Pork Tenderloin Diablo

The pork tenderlion was fabulous - restaurant quality. Great way to cook the tenderloin. Just be careful not to overdo the spices in the Diablo sauce, it gets HOT quickly!

Savory Chicken Breasts

I had an extra chicken breast to get rid of and tried this recipe. Simple, easy and excellent! I flattened the chicken breasts, used cheddar instead of swiss cheese, and added some sliced green olives as a topping. When I make this again, I may try white wine instead of milk.

OK but a little bland. Watch out you don't add SHREDDED cheese instead of GRATED cheese ... you get a sticky mess.

Lemon Ice-Box Cake II

Simple to make and tasty. Be sure to save enough of the condensed milk/lemon juice mix to fold into the frosting. Just a little less lemony than I would have liked.

Easy Salsa Meatloaf

Definitely my all time favorite meatloaf recipe! Followed the directions exactly and it was wonderful. Very easy to make. Added a little leftover spaghetti sauce on the top while cooking.

Mushroom Cube Steaks

Smoked Sausage in Mushroom Wine Gravy

Penne Russo a la Vodka

I really enjoyed this recipe. It's easy to make and extremely tasty. I didn't have the prosciutto so I substituted an equivalent amount of shaved ham - worked fine. Just be sure to use EXACTLY the amount of red pepper flakes the recipe calls for, and be sure the sauce reduces to a point of thickness before mixing with the pasta. My wife couldn't get enough of this.

Awesome Ham Pasta Salad

One of the best pasta salads I ever made. Easy and oh so tasty. I sustituted pickle relish for the pickles, and added a dollop of hot sauce for zip. Worked just fine. Warning, the recipe states it serves 6; it makes a TON of pasta salad. I would call it 10 servings. That said, anybody who has tasted this has asked for the recipe.

Amazing Slow Cooker Orange Chicken

Really enjoyed this - easy to make, tastes great and my wife now thinks I'm a chef. Add just a little heat (chili or hot sauce) to give it just a little more tang. I'll make it again.
