Beef Potato House Pie Casserole
This was delicious! I made a few changes (some healthy, some not): 1 - added about 1/2 cup of light cream cheese to my potatoes, 2 - sauteed the onions, green peppers and about a cup of mushrooms in 1 1/2 tsp of coconut oil, 3 - added my sauteed veggies to beef mixture with a can of cream of mushroom soup, 4 - included shredded cheese tomy layers (beef, potatoes, cheese, beef, potatoes, cheese). This was so good, I went back for seconds.Not a great dinner to eat the day after sstarting a diet, but there's always tomorrow! Thanks for the great recipe. Will be adding this in to my usual rotation. :)

Apple Stuffed Chicken Breast
I have done this recipe several times and my husband made an excellent suggestion...to throw some cream cheese in the middle when you roll it up. This made all the difference! Just a little slice from a package of cream cheese and it was so good! I also added some brown sugar and cinnamon to the mix for inside the chicken, as well as about 1 - 2 tbsp of brown sugar to the sauce after the chicken is done. My husband asked me to make this for his mother, so fingers crossed she likes it! :)

Strawberry Spinach Salad III
This is my absolute favorite salad to make and eat! Everyone loves it! The only alterations I made is to use sliced almonds instead of the sesame seeds, and I add about 1/2 cup (or less) of Crumbled Goat's Milk Feta Cheese (PC Brand). Mmmmmmmm!!! Thanks to my husband, I have an empty Grolsch bottle I use to keep my salad dressing in - thanks to the swing top bottle, I always have fresh dressing at the ready!
