Indian Chicken Curry (Murgh Kari)

Tastes as good as anything I've ever gotten at the Indian restaurants. Just the right amount of spice! Substituted the chicken with cauliflower, chickpeas and red potatoes and added green peas at the end. Put this over the "Indian Style Basmati Rice" recipe from this website. I will definitely be making this again. Might try substituting coconut milk for the yogurt next time.

Homemade Vanilla Extract

Made this several years ago and I'll probably use the last of it in the next few months. Thanks to this recipe, I will NEVER buy vanilla extract again. This time when I make it I will make 1/2 a liter instead of a full liter.

Creamy Curried Root Vegetable Soup

This was pretty good. I used sweet onion instead of green, 6 cloves of garlic instead of two heads, and heavy cream instead of milk. It wasn't spicy enough for me so I drizzled some sriracha on my serving. That made it perfect.

Broccoli Soup

This was yummy. I used a head of fresh broccoli, butter instead of olive oil, 3 small potatoes, 3 cloves of roasted garlic, skipped the nutmeg, and used homemade vegetable broth instead of the chicken broth. So glad to find a broccoli soup recipe that doesn't use processed cheese. Sprinkling some pecorino romano on top made it perfect.

Apple Chips

DELICIOUS!!! These taste better than anything I've ever bought from the store. They do need to cool off before they get crispy. I made 2 batches and baked them for 50-55 minutes. The slicing feature on my food processor made the slices smaller than I would have liked. I'll probably look into buying a mandoline. I used brown sugar and only used about a teaspoon. And I lightly sprayed the pan with coconut oil to keep them from sticking. My new favorite way to use up extra apples.

Apple Squares

These were delicious. I halved the sugar, skipped the nuts, and shredded the apple (about 1/2 an apple). Next time I'll try half whole wheat flour, half all purpose flour. I'll definitely be making these again. I almost always have these ingredients on hand and they were fast and easy to make.

Blueberry Vodka Martinis

These came out great. I made them last summer when I got fresh blueberries in my CSA share. I just made another batch last week to take to a bachlorette party. I expect them to be the hit of the party :-)

Basil Cream Sauce

This was great! Added some garlic powder instead of garlic since that's what I had. As suggested, made a roux from butter and flour and then added the cream and whisked often until thickened. This will be my new go-to white sauce.

Zesty Quinoa Salad

This was great. I added jicama, corn, feta, red onion (insetad of green), lettuce, and used regular and red quinoa. Added Trader Joe's orange muscat champagne vinegar and sriracha to the vinaigrette. Next time I'll add avocado and champagne mangoes too!

Tofu Tacos I

Wouldn't mistake these for meat but definitely a respectable substitute. Froze, thawed, crumbled and baked tofu at 200F for 20-30min. This made the texture similar to ground meat. I'll probably double up on the spices next time. Will definitely make these again.

Summer Squash Puffs

Delicious! I added 2/3cup sharp cheddar and sauted my onion before adding it. Will add garlic next time. I like to have mine for breakfast with cheese grits. This will be my staple squash recipe.

Pot Stickers (Chinese Dumplings)

These turned out great! I used kale instead of cabbage (that's all I had) and only used 1 lb of shrimp (skipped the beef). These came out better than I expected. As good as anything I've had in any restaurant, but I'll use cabbage next time. Be warned that this makes a lot of potstickers. I only used 1lb of shrimp and still had enough filling for an entire package of wrappers (about 50). I used the recipe for "Gyoza sauce" from this website. I ended up freezing most of them.

Manicotti Shells

These were just ok. Like another reviewer said they were very crepe-like. Might make them again if I was in a pinch. I stuffed them with maicotti and baked baked them. Turned out better than I expected, but still not as good as regular manicotti shells. I'll probably just make lasagna roll ups next time.

Cheddar Bay Biscuits

Good biscuit. Not quite like the famous restaurant chain, but a delicious substitute. I too used milk instead of water, added garlic salt, Old Bay and parsley to dough, and baked for additional 3-4 minutes after brushing with butter mixture.

Mango Gazpacho

Wow. This was the first time I ever had gazpacho. I was skeptical but it turned out great! Forgot to add the jalopeno and it was good, added the jalopeno and it was great. I used cilantro. Will definietly be making this again.

Light and Fluffy Spinach Quiche

The filling as prepared in the recipe is enough for 2 pie shells. The extra egg is a good idea. I use mushrooms, broccoli, onion, spinach, cheddar and goat or feta cheese. Delicious!
