Maple Dill Carrots

Reviewed: Aug. 18, 2014
I always liked carrots but I LOVED this. I could eat a whole bowl of these as a meal.

Blueberry Vodka Martinis

Reviewed: Jul. 22, 2014
These came out great. I made them last summer when I got fresh blueberries in my CSA share. I just made another batch last week to take to a bachlorette party. I expect them to be the hit of the party :-)

Basil Cream Sauce

Reviewed: Jul. 6, 2014
This was great! Added some garlic powder instead of garlic since that's what I had. As suggested, made a roux from butter and flour and then added the cream and whisked often until thickened. This will be my new go-to white sauce.

Zesty Quinoa Salad

Reviewed: May 10, 2014
This was great. I added jicama, corn, feta, red onion (insetad of green), lettuce, and used regular and red quinoa. Added Trader Joe's orange muscat champagne vinegar and sriracha to the vinaigrette. Next time I'll add avocado and champagne mangoes too!

Tofu Tacos I

Reviewed: Feb. 27, 2014
Wouldn't mistake these for meat but definitely a respectable substitute. Froze, thawed, crumbled and baked tofu at 200F for 20-30min. This made the texture similar to ground meat. I'll probably double up on the spices next time. Will definitely make these again.

Summer Squash Puffs

Reviewed: Jul. 17, 2013
Delicious! I added 2/3cup sharp cheddar and sauted my onion before adding it. Will add garlic next time. I like to have mine for breakfast with cheese grits. This will be my staple squash recipe.

Pot Stickers (Chinese Dumplings)

Reviewed: May 16, 2013
These turned out great! I used kale instead of cabbage (that's all I had) and only used 1 lb of shrimp (skipped the beef). These came out better than I expected. As good as anything I've had in any restaurant, but I'll use cabbage next time. Be warned that this makes a lot of potstickers. I only used 1lb of shrimp and still had enough filling for an entire package of wrappers (about 50). I used the recipe for "Gyoza sauce" from this website. I ended up freezing most of them.

Manicotti Shells

Reviewed: May 12, 2013
These were just ok. Like another reviewer said they were very crepe-like. Might make them again if I was in a pinch. I stuffed them with maicotti and baked baked them. Turned out better than I expected, but still not as good as regular manicotti shells. I'll probably just make lasagna roll ups next time.

Cheddar Bay Biscuits

Reviewed: May 12, 2013
Good biscuit. Not quite like the famous restaurant chain, but a delicious substitute. I too used milk instead of water, added garlic salt, Old Bay and parsley to dough, and baked for additional 3-4 minutes after brushing with butter mixture.

Wow. This was the first time I ever had gazpacho. I was skeptical but it turned out great! Forgot to add the jalopeno and it was good, added the jalopeno and it was great. I used cilantro. Will definietly be making this again.

Light and Fluffy Spinach Quiche

Reviewed: Oct. 14, 2012
The filling as prepared in the recipe is enough for 2 pie shells. The extra egg is a good idea. I use mushrooms, broccoli, onion, spinach, cheddar and goat or feta cheese. Delicious!

Seven-Up™ Cake II

Reviewed: Aug. 19, 2012
Made this cake twice. First with hand mixer (came out dry). Second time used my stand mixer...AMAZING! This is what my grandmom's 7-Up cake used to taste like. Moist with a sweet "crust" on the outside. No glaze needed. Used 2tsp lemon extract and 1tsp vanilla extract. So excited!

Steamed Radishes

Before this recipe I had only had raw radishes in salads. This recipe for cooked radishes was DELICIOUS. Happy to add another vegetable to my options.

Absolute Best Pancake Syrup

Reviewed: Mar. 2, 2012
DELICIOUS! Used 3/4c sugar instead of 1c. Added 2T maple/agave syrup (Trader Joe's) instead of 1T of corn syrup. Added 1/2 a pinch of nutmeg. Added 1/4t cornstarch to thicken.

Stuffed Green Peppers I

Reviewed: Aug. 15, 2011
Only 4 stars because I ended up adding 3 cups of water to cook the rice. The 1/2 cup listed was not nearly enough. (I used brown rice, maybe this was why?) Other than that it was delicious. I used turkey sausage instead of ground beef. And you should probably use medium sized peppers and not the ginormous peppers I used or you won't have enough filling :-/

Four Egg Yellow Cake

Reviewed: Dec. 31, 2010
I thought making a cake with shortening sounded weird but after reading the other reviews I decided to try it with 1/2 shortening and 1/2 butter. It was VERY dense, almost thick like cornbread. Maybe this would taste better if you replace the shortening with butter. "David's Yellow cake" (also on allrecipes.com)is FAR superior.
