Always A Winner Grilled Chicken

This is an outstanding, full flavored recipe. I've made it twice with excellent results. Knowing I would be making it again and again, I decided to triple the seasonings and reserve two-thirds for the next two times I make the chicken. I also stopped flattening the breasts. Instead, I cut through them lengthwise (butterflied) to save time and mess of pounding them into 1/2 inch thickness. I would not recommend marinating the breasts more than 4 hours or the meat texture will turn mushy. You can apply the seasonings to the meat and refrigerate for overnight. Then add the liquids (juices, vinegar, oil) and marinate for 1/2-1 hour before grilling. As the recipe creator said, the leftovers are great. No-- they are fantastic for salads, cassreoles and sandwiches. This recipe is a keeper. It deserves all five stars.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

These tacos were absolutely fantastic! Each component added to the textures and flavors making them dance deliciously in your mouth. We loved the slaw, even on it's own. And the chipolte mayo added that final touch of creaminess and a little spicy smoke. This recipe deserves all five of it's stars! I made this again and added a slice or two of avacado and wrapped them in grilled corn torillas and gave them an extra squeeze of lime. Either way-heaven, pure heaven.

Minty Orzo Lentil and Feta Salad

This is not just an excellent salad, it's a complete meal if you wish it to be. This is an excellent recipe and is easily adapted to add addtional ingredients as summer vegetables become prolific. Especially grilled vegetables. It is delicious as it is, but toss a few cherry tomatoes on top for some extra color just before serving. We give it 5 stars. We loved it.

Avocado and Tuna Tapas

This was very good. I would reduce the amount of green onion for those who do not care for a strong onion flavor or dependent on the size of the onions. I do like a little crunch, so would like a little celery or cucumber as well as a bit more acid but those are personal preferences. The recipe is very good as written.

Drip Beef Sandwiches

Instead of a coffee filter, we always use a tea ball (dedicated for spice use only) and just hang it on the rim of the pot. I would also recommend chilling overnight (if time is allowed) so that you can easily remove the excess hardened fat. The recipe is very, very good. Very nice flavor.

Rogan Josh, Lamb Shanks

Just a tip(s) for the person who thought the lamb was too greasy. --Brown the lamb shanks well before placing in tomato mixture. Browning helps melt excess fat and enhances the flavor. --When done cooking, cool and refrigerate overnight. Skim the excess fat from the surface, then reheat. It tastes even better the second day. Love the spice combo. It really makes the dish sing.

MInty Orzo and Peas

I loved this recipe too. Plus, if you sub olive oil for butter, it's excellent cold too. This one's definitely a keeper. The lemon really makes this special. Thanks for a great recipe.

Andy's Spicy Green Chile Pork

It doesn't get easier or more tasty than this. I would probably add a few peeled cloves of garlic to the pot, but that's just my preference. This recipe is great "as is". Thanks Andy. The guys are going to love this recipe for their hunting trips. I'm going to love at home.

mmmm, delicious. If you want to add a few more Easter leftovers, serve over those split, buttered and re-heated dinner rolls, and top with a bit of that chopped up leftover ham. mmmm-mmmm.... The ideas to serve this with are endless! Thanks for the great recipe!

Southwestern Roasted Corn Salad

I often make a salad like this in the summer. Especially when there's left over grilled corn. Omit the sugar if using sweet corn and it's fresh. Sometimes we add a can of cumin flavored black beans too. But this salad is GREAT as it is (minus sugar.) Great, fresh flavor. We give it five stars.

DT's Beef Dip

This recipe is great, just the way it is. We like it with the addition of a dash of worchestershire, dash of hot sauce and some prepared horseradish (about 1-2 t.) Really adds that zesty zip. Great spread on crackers or bagels too.

Spicy Chicken Rice Soup

This soup really warms and soothes on a chilly day. I would omit the salt next time. The chicken broth was salty enough. Next time I make I, I'd probably add a little minced garlic and a squeeze of fresh lime juice, my personal preference, but this is truly delicious as the recipe is written. Definitely worth the 5 stars for both ease of preparation and flavor. Thanks for the easy and delicious recipe Elaine.

Reveillon Tourtiere

My husband took one bite and said, "Mmmmm, this is AWESOME!" It was the first tourtiere he'd ever eaten. I did have to use fresh savory because I did not have dried, reduced the garlic to on clove (because it was huge). I also used less only a generous 1/2t. of cinnamon and a 1/4t. of clove. I used a 12 oz. box of fresh mushrooms and sliced them very thin. I did not have fresh bread crumbs so I substituted instant mashed potato flakes, stirring after each addition until the meat mixture was lightly bound. The flavor and fragrance of this pie is seductive. It makes an impressive (and easy to prepare)party dish. We will defintely be making this again and again!

For the last poster-- microwaving is very easy and quick. Cover dish with wax paper or place in a deeper dish and cover with a microwave-safe plate. No toxins and very easy.

Slow Cooker Thanksgiving Turkey

I like the concept of making a turkey breast in a slow cooker, so I gave it a try. I cooked it on high for 4 hours and when I checked the internal temperature, it was done. I held it on warm for an hour and it was still very moist. Next time I will cook it at the lower setting and check it after 4 hours. I did not have turkey gravy, so substituted a 1/2 cup of stock. When the turkey was done, the slow cooker yielded about 4 cups of liquid. Plenty of juice for gravy. I did use the bacon; in the end did not affect the flavor of the turkey much, but made the gravy liquid a bit too smoky and overwhelmed the turkey flavor. I will not use the bacon again. All in all, this is a good basic recipe. I'd definitely experiment with more fresh herbs and spices next time, while omitting the bacon.

Super simple and delicious. Nothing easier than a two ingredient recipe. I give it 4-1/2 stars for ease of preparation and flavor. Great idea for dorm cooking or harried families wanting a hot meal on school nights.
