Gary's Stuffed Mushrooms

Reviewed: Jan. 3, 2006
These were so good! I used about a third of a stick of butter, probably won't use any next time. I also added the garlic to the stuffing rather than the butter. My boyfriend liked them so much he ate all the leftover stuffing!

Dog Food Dip

Reviewed: Jan. 3, 2006
It really did look like dog food! It was a bit spicy so I will use less jalapenos next time but other than that it was quite delicious!

Glazed Meatloaf I

Reviewed: Jan. 23, 2006
This was the first time I have ever made meatloaf and this was an easy and delicious recipe. The only changes I made were: fresh garlic for the mustard powder, less bread and no beef bouillon.

Slow Cooker Sweet and Tangy Chicken

Reviewed: Feb. 9, 2006
I really did not like this recipe at all, I have to agreed with the review that said the chicken was tender but tasted dry. I don't anticipate that I will be making this again.

Broccoli Cheese Soup

Reviewed: Feb. 13, 2006
With the amount of changes necessary to make this soup I really don't think it deserved 5 stars because if made the way the recipe reads it would probably be way too thin. I read the reviews beforehand and made the following changes- 1) more broccoli! I used two frozen packages instead of one 2) three cans of chicken broth instead of four and fresh garlic instead of the powder. I would suggest pepper as well, it was a bit bland. But overall it was good and easy hence the four stars.

Chickpea Macaroni Salad

Reviewed: Apr. 26, 2006
I really enjoyed this recipe as did the rest of the people that I served it to. I didn't use black olives or onions but did add cucumber. It was light and the lemon juice and olive oil made a very nice dressing though I used a bit less than called for. I will use this recipe again- there are so many variations to try out!

Jalapeno Poppers I

Reviewed: Jan. 2, 2007
These were okay. Very time consuming and messy. I will not make them again. They are not bad when finished but not worth the effort.

Chicken Korma II

Reviewed: Feb. 15, 2007
This was just a marvelous dish! I can't wait to make it again. I didn't make any changes except I used low fat yogurt instead of full fat and added an extra tsp of garam masala. It is a bit labor intensive but it is really worth it in the end.

Nanny's Goulash

Reviewed: May 1, 2007
I thought this dish had a nice consistency. I used a 28oz can of tomatoes instead of the smaller one, used fresh garlic instead of garlic salt, no mushrooms, added a yellow pepper. My only problem with it was that is was too bland, I even doubled the basil and paprika. I have some left over and I'm hoping that letting it sit for a day or two will give it a bit more kick.

World's Greatest Vegetable Broth

Reviewed: May 24, 2007
I didn't think this vegetable broth was as impressive as the other reviewers, it was good but... I didn't have clove but I can imagine that would be the difference between okay and great. The vegetables roasting made the house smell really good which was nice.

Curried Vegetables

Reviewed: May 24, 2007
This was a really good and easy recipe. I added coconut milk as suggested by other reviewers but only about 1/6 of a can as to not make it a soupy consistency but it would be good like that too. I didn't have eggplant so added 1/2 a head of cabbage and 3 small zucchini. The combination of spices really works and I added about a teaspoon of garam masala. I will definitely make this again, you can throw just about anything in it- cauliflower, potatoes, chickpeas and green peas sounds like a good combination for next time.

Portobello Mushroom Chili

Reviewed: Sep. 13, 2007
This was very good, I did make a few changes - increased garlic to 5 cloves, added cumin, used black and kidney beans and plain diced tomatoes. I served it over whole wheat egg noodles and topped with sour cream and a little mozzarella, it was a hit! My boyfriend who is an avid meat eater didn't miss meat at all in it.

This was a good recipe though I made some changes 1) tomato sauce instead of tomato soup 2) added red onions 3) 3 garlic cloves 4) additional spices to the beef - cumin, cayenne, chili powder 5) No parmesan cheese 6) mixed the beef mixture and noodles and baked in the oven @ 350 for about 10 minutes topped with green peppers and cheddar cheese.

Easy Meatloaf

Reviewed: Jan. 9, 2008
The name says it all, easy! A couple of changes - used 2 pieces of whole wheat bread instead of the bread crumbs, used dijon mustard instead of regular yellow and used about 3/4 cup milk. I saw that other reviewers sautéed the onion before but I just diced mine pretty small and it was fine. Next time I'll add some garlic and try the bread under the loaf trick because it did get fairly greasy. My boyfriend was a big fan as was I. I will definitely be making this again.

Baked Penne with Italian Sausage

Reviewed: Feb. 13, 2008
This was really good with a little tweaking - added about 4 cloves of garlic, basil, oregano, pepper, sprinkled the top with romano cheese in addition to the mozz and used spicy italian sausage. I made this as an early V-day dinner for my boyfriend and he loved it, we will definitely use this recipe in the future, thanks!

Spinach Enchiladas Verde

Reviewed: Oct. 15, 2008
These were pretty good. I made a couple changes - whole wheat tortillas instead of corn, green enchilada sauce instead of salsa and I added mushrooms and onions. Next time I will try it with the green salsa to make a thicker sauce and maybe add some chicken or maybe even articokes! Also if you use canned mushrooms make sure to squeeze as much of the water out of them and if you put enough of the sauce on the bottom and sides of the pan they should not stick that much.

Quick and Super Easy Chicken and Dumplings

Reviewed: Oct. 21, 2008
I've made this twice and both times I've had great results. Both times I've added a bag of frozen veggies and used leftover chicken. Also if you add more broth (I think I added about 40 ounces) you get more of a chicken and dumplings soup. For those with leftover dough make biscuits with it! This is definitely an easy recipe base that will stay in my rotation. Thanks!

Cowboy Oatmeal Cookies

Reviewed: Nov. 20, 2008
Like everyone else I made some minor changes - butter instead of margarine, no chips, added vanilla. These were very good. Next time I will cut back on the amount of white sugar, I reduced it to about 3/4 cup but I still think it was too much. I am looking forward to trying them with different ingredients, thanks for the recipe!

This was very good. I used fresh green beans instead. Next time I'll cook the beans longer, I am looking forward to having the leftovers tonight!
