Basil Cream Sauce

This was a great sauce, I made a few modifications- Half & half instead of cream which I used about 8oz + 2T of butter. Also, I threw everything in the food processor at once except for the olive oil, it didn't seem necessary to do it in 2 steps. Added more garlic because I always add more garlic :) Tossed it with fusilli, some of the pasta water and two large, diced, tomatoes. My boyfriend and I loved it.

7UP Winter Mint Sherbet Punch

Easy and delicious punch recipe! Made it for a baby shower I was hosting (with white rum on the side) and it was hit. I made ice balls with fresh mint and garnished the punch with it as well. Will definitely make it again, thanks!

Carrot Cake III

This carrot cake was wonderful. I made some changes based on personal preference and the other review- no pecans, 1/2 cup applesauce & 3/4 cup oil instead of all oil, 1 cup white & 1 cup dark brown sugar, added 1/4 t each - nutmeg, allspice & cloves. I baked it in a 8in springform pan for about 60 minutes. It was quite the hit. I have never made a cake from scratch, this will definitely be my go-to carrot cake though I think I will look for a different frosting recipe but there was nothing wrong with this one. For the reviewers complaining about the changes people make- Cooking is an art, not an carbon copy of someone else's creation. I, personally, enjoy reading reviews by others for inspiration. Even without the changes I made to this recipe it would have been great.

Baked Potato Skins

This is a great recipe. I didn't measure the spices or cheeses, just eyeballed them. I used 5 potatoes instead of 4 and 3T of oil was still a bit much too much. My boyfriend was so excited to have potato skins for dinner! I used turkey bacon and extra sharp cheddar. A good use for the potato "middles" is just to toss with oil, salt and pepper and bake, it is a bit like home fries.

Creamy Buttermilk Dressing

This recipe is delicious, I cut it in half, omitted the onion powder and added dried dill and fresh chives. Definitely let it chill for at least an hour, the apple cider vinegar is very strong if you don't. Like the other reviewers said - add more buttermilk if you would like to thin it.

Greg's Southern Biscuits

This was my first attempt at buttermilk biscuits and these turned out pretty great. I think I either worked the dough too much or not enough as they didn't turn out as flaky as I would like but that was definitely due to me not the recipe. The only change I made was to use butter in place of the lard and bacon drippings. I will be trying these again very soon, thanks for a great recipe! Edit - Made again 11/17 with 1/2 cup whole wheat flour and 1 1/2 cups white flour, did not have as much luck, maybe it needed more baking soda or powder, not sure. Still were good though.

The Best Banana Bread

This was my first time making banana bread and it turned out great! Only made a few changes - 1/2 cup extra virgin coconut oil instead of butter and I only used 1/2 cup of sugar (1/4 white & 1/4 brown). I used three bananas, I didn't bother to measure them out. It was perfectly cooked after 55 minutes. I will try adding walnuts next time and maybe make muffins. Thanks!

Cincinnati Chili I

I thought this was great as did my boyfriend who probably eats Skyline about once a week! He did agree it was a little different but liked it all the same. Couple of changes - no onion, boiled the meat in the stock and tomato sauce rather than browned, added about 1 tsp of garlic powder, 2T of cocoa rather than the chocolate, less cinnamon probably 1/2 tsp as it is not my most favorite spice. I also used ground turkey and chicken stock rather than the beef. Next time I will use my immersion blender to get a thinner consistency. Thanks!

Onion Barley Casserole

After reading the reviews I decided to make this with some alterations. I only had instant barley so mine only took about 20 mins to cook. I browned the barley along with 1/2 a white onion and 1/2 a celery rib, both finely chopped as will as 3 cloves of garlic. Instead of water I used chicken stock. I added about 1 cup of thinly sliced baby bellas and a dash of cumin. This was my 1st attempt at making barely and I really enjoyed it.

Cowboy Oatmeal Cookies

Like everyone else I made some minor changes - butter instead of margarine, no chips, added vanilla. These were very good. Next time I will cut back on the amount of white sugar, I reduced it to about 3/4 cup but I still think it was too much. I am looking forward to trying them with different ingredients, thanks for the recipe!

Quick and Super Easy Chicken and Dumplings

I've made this twice and both times I've had great results. Both times I've added a bag of frozen veggies and used leftover chicken. Also if you add more broth (I think I added about 40 ounces) you get more of a chicken and dumplings soup. For those with leftover dough make biscuits with it! This is definitely an easy recipe base that will stay in my rotation. Thanks!

Spinach Enchiladas Verde

These were pretty good. I made a couple changes - whole wheat tortillas instead of corn, green enchilada sauce instead of salsa and I added mushrooms and onions. Next time I will try it with the green salsa to make a thicker sauce and maybe add some chicken or maybe even articokes! Also if you use canned mushrooms make sure to squeeze as much of the water out of them and if you put enough of the sauce on the bottom and sides of the pan they should not stick that much.

Baked Penne with Italian Sausage

This was really good with a little tweaking - added about 4 cloves of garlic, basil, oregano, pepper, sprinkled the top with romano cheese in addition to the mozz and used spicy italian sausage. I made this as an early V-day dinner for my boyfriend and he loved it, we will definitely use this recipe in the future, thanks!

Easy Meatloaf

The name says it all, easy! A couple of changes - used 2 pieces of whole wheat bread instead of the bread crumbs, used dijon mustard instead of regular yellow and used about 3/4 cup milk. I saw that other reviewers sautéed the onion before but I just diced mine pretty small and it was fine. Next time I'll add some garlic and try the bread under the loaf trick because it did get fairly greasy. My boyfriend was a big fan as was I. I will definitely be making this again.

This was a good recipe though I made some changes 1) tomato sauce instead of tomato soup 2) added red onions 3) 3 garlic cloves 4) additional spices to the beef - cumin, cayenne, chili powder 5) No parmesan cheese 6) mixed the beef mixture and noodles and baked in the oven @ 350 for about 10 minutes topped with green peppers and cheddar cheese.

Portobello Mushroom Chili

This was very good, I did make a few changes - increased garlic to 5 cloves, added cumin, used black and kidney beans and plain diced tomatoes. I served it over whole wheat egg noodles and topped with sour cream and a little mozzarella, it was a hit! My boyfriend who is an avid meat eater didn't miss meat at all in it.

Curried Vegetables

This was a really good and easy recipe. I added coconut milk as suggested by other reviewers but only about 1/6 of a can as to not make it a soupy consistency but it would be good like that too. I didn't have eggplant so added 1/2 a head of cabbage and 3 small zucchini. The combination of spices really works and I added about a teaspoon of garam masala. I will definitely make this again, you can throw just about anything in it- cauliflower, potatoes, chickpeas and green peas sounds like a good combination for next time.

World's Greatest Vegetable Broth

I didn't think this vegetable broth was as impressive as the other reviewers, it was good but... I didn't have clove but I can imagine that would be the difference between okay and great. The vegetables roasting made the house smell really good which was nice.

Nanny's Goulash

I thought this dish had a nice consistency. I used a 28oz can of tomatoes instead of the smaller one, used fresh garlic instead of garlic salt, no mushrooms, added a yellow pepper. My only problem with it was that is was too bland, I even doubled the basil and paprika. I have some left over and I'm hoping that letting it sit for a day or two will give it a bit more kick.
