Pirate Stew

Ahoy matey - wonderful change from tradition beef stew. We tried with pork and was just as good as the beef. Always in demand at our house. We dress like pirates and can only speak in pirate lingo!

Pumpkin Cake I

Wonderfullymoist flavorful cake. I used 1/2 c oil and 1/2 c unsweetended applesauce. In addition to the nuts, I added 1/2 c dried cranberries. Everyone in the house gave it 5 stars. Sending some to my daughter at college.

Baked Cream Corn

This turned out perfect, not too watery. I substituted a can of whole kernal corn for on the cans of creamed and omitted all the spices except the onion powder. Very tasty and a perfect side for ham.

The Mushroom Steak Stuff

My picky son said this steak is great, something he NEVER says about a new dish. The only thing I changed was that I added 1/4 cup chopped scallions. This is definitely going on the regular rotation.

Golden Chicken and Autumn Vegetables

The chicken did not absorb as much of the herb flavors as I thought and was bland though it was juicy and tender. If I make this again I will slice some onion and maybe some apples to cook with the potatoes.

Eggnog Cheesecake III

Instead of adding the nutmeg to the recipe I added 1/2 tsp to the crust and then sprinkled pumpkin pie spice into the filling. I also used 1 tablespoon dark rum instead of 2 T rum.

Chicken Enchiladas I

Fabulous recipe. The kids gave it 7 stars. I added only 1 tsp of chili powder and used mild taco sauce as my family does not like it too spicy. Also the left over chicken sauce was poured over the top of the taco sauce before sprinkling the cheese.
