Slow Cooker Oats

Great oats! I modified a bit - used my mini crock pot and an appliance timer to set it for 5 hours on low, programmed to finish when we wake up. I used 2 cups almond milk and 1 cup water, the oats, apples, and raisins. Subbed maple syrup for sugar and cut back on the cinnamon. Yum! My kids absolutely love this oatmeal, and I love that I don't have to think about it in the morning.

Vietnamese Fresh Spring Rolls

Yum! I had no time or energy for shrimp, so I subbed in some rare roast beef from the deli counter, doused in soy sauce. Delicious and way easier.

Peach Kuchen

Delicious. I used butter instead of marg., and added a crumb topping. Used four whole peaches, sliced. I had to bake it about 55 minutes total because of the topping. Oh, and I couldn't find my springform pan, so I used an oval baking dish...worked fine! A great recipe. Thanks for sharing it!

Tiramisu II

I used 1 c espresso, 1/4 c kahlua, put it in my springform pan, and then added the extra ladyfingers around the edge. I also sprinkled cocoa powder between the whipped cream and ladyfinger layer in the middle of it. I also used a lot more ladyfingers than it called for. I had a 14 oz pkg of the Allesi brand. I used three of the four inner packages.

My Bottom-Up Peach Cobbler

Used a cast iron skillet. Didn't have self-rising flour, but my handy-dandy Betty Crocker Cookbook told me that a substitute for 3/4 cup self-rising flour is 3/4 cup all-purpose flour, 1 tsp baking powder, and 1/8 tsp salt. Used about 8 fresh nectarines instead of canned and sprinkled cinnamon and brown sugar on top.

Stuffed Pork Chops II

Very good! I added some chopped red onion into the stuffing and also used fresh corn off the cob because 'tis the season. Added some fresh herbs from the garden, too. I am not a fan of cream of anything soups, so instead I used plain yogurt mixed with a little lemon juice and cumin, spread on top of the chops, and topped that with a bit more stuffing mix. Baked with foil on for 30 minutes and foil off for 15.

Perfect Berry Shortcakes

Hearty Oatmeal Loaf

Four stars because I altered the recipe a bit. This is a *great* sandwich bread. Fine crumb and slices easily, I love it. I don't have a bread machine, so I made this the old fashioned way. Used 1.5 cups graham flour, 1.5 cups bread flour, and regular rolled oats. After I placed it in a greased bowl to rise, I covered it and put it in the fridge overnight. Then in the morning I punched it down, shaped it into a loaf, put in a greased loaf pan, and let rise another hour. Then baked at 350 for 30 minutes. The overnight rise was great - it made the oats dissolve into the bread and it's not 'chunky' if you know what I mean.

Pakistani Lentil Curry

4 Stars because I doctored it up - added a chopped carrot and two diced potatoes to the lentils, did half split peas, half lentils and used 2 c. total with 4 c. water. Very yummy!

Christmas Morning Popovers

I was craving popovers this morning and gave this recipe a try. They were very good! I used a muffin tin, but I don't think I greased it well enough because some of my popovers stuck. It made 10 of them with the muffin tin. I also added a tsp. of vanilla and served them with honey butter and fresh strawberries. Yum!

Garlic Roasted Chicken

Delicious! So moist and tender and the meat fell off the bone. I used white wine, no stock, lots of extra garlic (I think about 8 cloves total), halved an onion to put in the cavitiy, and put the whole thing in a cast iron skillet in the oven. I didn't cover it with foil and it was done right when the recipe said it would be. Yum!

Texas Ranch Potato Salad

Yum! I did a few substitutions: 1. I used frozen diced hashbrowns and cooked them up and let them cool (I think the browning of some of the potatoes makes it taste WAY better!). 2. I used 1/2 mayo, 1/2 sour cream Thanks for the recipe!

Mom's Zucchini Bread

Delicious! I followed other reviewers' advice and used 1/2 c. oil, 1/2 c. applesauce, and used 1 cup white sugar and 1 cup brown sugar. Then I made them in a mini muffin tin and frosted them with cream cheese frosting - the kids thought it was a great dessert and I got to sneak veggies in. :)

Tuna Garden Casserole

This was great! I have a bunch of kale that needed to be used up and this fit the bill perfectly. I did do a few substitutions: I omitted the sherry (the kale steamed itself just fine without any liquid added to the veggies); I didn't have potato leek soup, so I used a can of condensed cream of potato soup instead; I didn't have vegetable stock so I used 1/2 cup of water and 1/2 cup of whole milk. It turned out creamy and had lots of flavor. Thanks for the recipe! It sure beats Tuna Helper :)

Grilled Whole Turkey

This was amazing. The meat literally fell off the bones! I used boxed chicken stock, chopped onions and garlic instead of powder, and added some fresh herbs I had on hand. Amazing! This was my first time cooking a whole turkey but I know it won't be my last. Thanks for the great recipe.

Mock Lemon Chiffon Cake

Delicious! I used lemon pudding mix for both the cake and the filling and definitely only needed the 8 ounces of cool whip for the filling, top, and sides. It was a hit at our BBQ and no one knew it was so easy to make! Thanks for sharing.
