Slow Cooker Spicy Black-Eyed Peas

Definitely a keeper! I made this for New Year's Day and invited another couple for dinner. Everyone loved this dish. I didn't have bacon, but had two ham shank bones that I used instead. It was delicious and we had them for leftovers tonight with cornbread.

Grandma's Lemon Meringue Pie

Pesto Pasta with Chicken

Made this exactly by the recipe. It was very good, but a little dry. Next time I will use a little of the pasta cooking liquid and maybe it will keep it from being dry. But flavor was very good and will make it again with a few modifications.

Peanut Butter Kiss Cookies

Very good! Will keep this recipe and make it again. So quick and easy to make with just three ingredients. It doesn't make many, so next time I'll double the recipe. And.... if you can keep your DH from eating the kisses before the cookies are baked, your're lucky.

Szechwan Shrimp

YUM! Hubby and I loved this. Great flavor. It was just a tad hot for me tho, but ok for him. I doubled the sauce, but it got kinda thick, so I think next time I'll cut down on the cornstarch (and maybe the red pepper flakes, too.) But it's a keeper.

Amazing Pork Tenderloin in the Slow Cooker

WONDERFUL!!! Definitely a five-stars recipe. I followed the recipe exactly as it is written, except since my roast was 3.5 lbs. I added a little more wine and water. Made small slits in the meat with the end of a paring knife and poked garlic slices into the slits all around the roast. Amazingly, it was done in 4 hrs. and was delicious. It made lots of gravy which I thickened a little with corn starch. Served it with mashed spuds and broccoli. The next evening we had it again on open face sandwiches with lots of gravy. YUM! My DH is still raving about it.

Crustless Spinach Quiche

This is a great recipe. We are on the SB Diet and I used low fat cheese. I now make it in place of the quiche cups listed in the diet book. Much easier to make. Maybe I'll add mushrooms next time. Super recipe.

Raspberry Cream Cheese Coffee Cake

I first found this recipe back in 1987 in a Pillsbury "Breakfasts and Brunches" cookbook. I always make it when we have a brunch and sometimes just for company and always have requests for the recipe. I follow the recipe exactly as printed and it turns out just fine.

Amish Breakfast Casserole

I didn't have bacon, so I used a 1 lb. roll of Jimmy Dean sausage that I fried and crumbled instead of the bacon. It turned out delicious. I think it would also be awesome with bacon, but unfortunately I didn't have it on hand at the time. Will make it again, and again. The family loved it.

Crab and Pea Salad

I thought this was an "odd" combimation of ingredients, but because of all the five-star ratings I decided to make it for a potluck last night. Hubby was concerned about eating "raw" peas but I persevered and made the recipe to the letter. Let me tell you..... It was a big hit. There was one little spoonful of salad left in the bowl while the potato salads were passed over. And guess what? Hubby said it was delicious. This is a keeper and very easy to make.

Garlic Shrimp and Cheesy Grits

This is a wonderful recipe, my wife and I made it last night exactly as it was written. We used a pound of of large gulf shrimp which is perfect for the two of us. served it over the wonderful creamy, cheesy grits with a side of fresh buttered carrots.We will use this recipe again and again. Baked Chicken Spaghetti

This was delicious. Made this today for our family Easter lunch. I doubled the recipe because we had 9 adults and 4 children and the recipe states makes 8 servings. It made enough for two casseroles, one 9 X 13 and one 8 X 11 and still had to put some in the freezer for later. Everyone went back for seconds. This is a keeper.

Icelandic Christmas Cake

This cake reminds me of the German cakes my mom used to bake. A welcome change from the heavily frosted cakes. I made it for Christmas exactly to the recipe with the exception of adding pecans because we all like them. I can see that adding more fruit might add to the flavor. I'm giving it five stars because everyone said it was very good and I'll make it again.
