Baked Spaghetti I

Loved it! I took it to a pot luck dinner and was asked several times for the recipe. It's a crowd pleaser - will definitely make it again. I added a bit more cheese, and no mushrooms, as my kids don't like them. Thanks!

Cinnamon Rolls III

St. Patrick's Day Zucchini-Oatmeal Cookies

These taste great - but if you are looking for a green cookie, definitely add some food coloring. the zucchini only adds small, barely-visible flecks of green.

Sausage Casserole II

This is good! I thought it was even better the following day. Instead of regular diced tomatoes, I used diced tomatoes with green chilis for a little more "kick." I also baked for 1/2 hour uncovered, and covered with foil for the remaining 1/2 hour to keep the sausage from burning. Will use again - thanks! :o)

Grandmother's Buttermilk Cornbread

This is SO GOOD!! I doubled the recipe and baked in a 9x13 pan for a family get-together. I also cut the sugar in half, as suggested by other reviewers. It was a huge hit - thank you for making me look like a better cook than I really am! :o)

Perfect Tuna Casserole

This is EXACTLY what a tuna casserole should be - My husband, who "doesn't like tuna casserole," had seconds AND thirds of this one! An easy, quick meal - I already had all the ingredients, so no quick trip to the store needed - perfect!

Double Layer Pumpkin Cheesecake

It's easy to see why this recipe has five stars - tastes great and is a much better dish than just plain old pumpkin pie! I would recommend whipping the cream cheese for 6-8 minutes - makes the cheesecake lighter. Thanks!

Creamy Chicken and Rice Soup

This was very good! I used garlic flavored chicken broth, as well as adding a little extra garlic for more flavor. Used only 1/2 c rice as suggested - great way to use up leftover chicken!

Make Ahead Breakfast Casserole

This was not very good - I expected it to be much better than it was, with all the 5-star ratings. The croutons made it soggy and it was just not very flavorful. VERY spinach-y...I won't be making this again.

Seven Layer Salad

I'll admit, when I was assigned a Seven Layer Salad for Christmas dinner with the family, I thought it seemed a bit strange - it tasted great! Made it early in the morning to be served that night. I did change the dressing a bit - 3/4 c sour cream, 3/4 c mayo and 3/4 miracle whip. I also added spinach to the iceberg lettuce, omitted the cauliflower and added a layer with sliced hard-boiled eggs. Delicious, and looked really beautiful in the trifle dish! Thank you!

Cream Cheese Sugar Cookies

It doesn't get any better than this - SOOOOOOO good! I didn't have time to refrigerate the dough for a long time, so I simply separated into three parts, placed in the freezer for 45 minutes and it worked just fine. It is sticky, but I just used plenty of flour and it wasn't a huge obstacle. Will use this every time I make sugar cookies from now on. Thank you!

Lemon Square Bars

These are terrific! I used about 3/4 c fresh-squeezed lemon juice and sprinkled confectioners sugar over the top after baking. I also covered the top for the last 8 minutes or so of baking to keep it from browning too much. Thanks! This is a keeper!

Cheddar Beef Enchiladas

Oh my goodness - these were SO good! I have tried a LOT of enchilada recipes, and this is definitely my favorite. I didn't have any cream of chicken soup, so used crm of mushroom instead. Fantastic! Will be making this a LOT.

Cherry Enchiladas

One word - Yum! I have been wanting to try this receipe for a long time, and finally made it last night for a Valentines Day dessert for my husband - big hit! I put it in the fridge for about 8 hours before baking. I didn't find it to be soggy at all, as some other reveiwers noted. Didn't change a thing. Served with vanilla ice cream. Perfection!
