Sugar Cookie Icing

LOVE this icing! Absolutely use colored paste, especially for intense colors. Liquid food coloring will make the icing runny & you will need to add more sugar. I divided the icing while it was a bit firm and added a tiny bit more milk to one batch, which I used to paint the main color. A firm craft paint brush worked great. It dried perfectly smooth and shiny. I used the slightly firmer batch for piping the fine lines, etc. Thin the icing with additional milk - not corn syrup, or your icing will not dry properly. Substitute vanilla for a milder flavor. It is available in clear, if you need your icing to remain pure white. There are dozens more iced cookies in my future. Thanks for a tasty, easy to use recipe!

Ham with Maple Gravy

Delicious and so aromatic! Your kitchen will smell fantastic. Definitely do not skimp on the apple juice and sub. with water. I did that once - a bit more bland ham & gravy. The apple juice is an important part of the lovely blend of smoky, tangy, mapley flavors. I have not cooked the apples - not a cooked apple fan, but the ham and gravy are a HUGE HIT in my house. I am not allowed to cook ham any other way. We love ham gravy so much that I add more apple juice and some water to the pan while baking so I have more liquid for gravy.

Easy Cheese Ball

Easy & delicious! No one will ever know there are only 3 ingredients - until you share this awesome recipe. I always make copies to share whenever I make this for a party, because I am always asked for the recipe. My husband hides the left over portion in the fridge so he doesn't have to share! I have rolled the ball in both chopped walnuts and chopped pecans. Both turned out very nice.

Old Fashioned Chicken and Dumplings

Try this with turkey! I had a gallon bag filled with leftover turkey & stock I froze several months ago. I also added carrots for the color and flavor. Definitely use UNSALTED butter. You will appreciate the parsley more - for a nice noodley taste. When I called my kids to the table, my skinny 9 yr old said "Yuck, I hate dumplings!" He ended up eating two servings and said it was delicious.

Amazing Slow Cooker Chocolate Cake

AMAZING! Moist with very nice chocolaty flavor! For you baker types who like your cakes light, perfectly spongy, and dry to the touch, this is not your cake. It's SO GOOD, it doesn't need frosting. I used my large, oval crock pot with the removable ceramic insert. Perfect size and cooked evenly. I made sure the water was boiling when I added it. This kick starts the cooking process. I was concerned about how it would cook through. My 12 yr old boys were home alone babysitting the cake, so after 3 hrs, I had them turn the pot to "warm" for 30 mins instead of turning off pot and letting sit for 30. Then they pulled the ceramic insert out to cool. PERFECTION! It was ready to eat immediately after 3:30. Made this last nite. I'm making another today so I can try with vanilla ice cream.

Spanish Rice II

Thank you for a recipe that does not include prepared salsa! Like others, I added cumin. If you want to make it more like a main dish, Add some browned hamburger or, better yet, spicy sausage. I think I will try adding chicken next time. Thanks for a great recipe. This will be a staple in my home -- something I can make as is, or a good base for customizing!

Crunchy Caramel Corn

AMAZING! I doubled the recipe & was worried the cooking time would not be enough in my 1000W micro. I added 10 secs to 1st heating and 30 secs last one. Not sure if it made a difference, but it turned out perfectly. This will be my ONLY caramel corn recipe!

Chili con Carne II

Yum! I am done looking for chili recipes! My entire family loved it. The level of spiciness was kid friendly, but still enough to be very tasty. The cloves really added a nice grown up flavor. I used chili beans instead of kidney beans. I also poured in about 1/3 c. strong black coffee - an impulse decision - gave it a bit of a smoky, dark flavor. I can see where this would be an excellent recipe to experiment with. I will definitely will be sharing this recipe! Thanks!

Slow Cooker Beef Stew I

Very nice with NO CHANGES. If you want tender beef, take the time to cook on low. I have made a zestier version by reducing the salt and adding 1 tsp. of Cabela's Hot and Spicy Seasoning Blend. However, I prefer the classic beef stew flavor, so most of the times that I make this stew, I don't mess with the recipe. Thanks for a simple, no fuss, no mess recipe!

Old-Fashioned Pancakes

Sift dry ingredients and measure carefully. If you use whole milk, you may end up with thicker batter. For light, fluffy texture, don't over mix and, most importantly, let the batter rest at least 5 mins. The baking powder needs time to activate. I just replaced my family favorite pancake recipe with this one. HINT: Watching videos prior to making a recipe for the first time may be the key to success. Sifting and resting. Two things I learned from this video. Glad I watched it.

Chocolate Chocolate Chip Nut Muffins

YUMMY! I just made these this morning. I didn't have semi-sweet chips, so I used milk chocolate chips. Nice. I will use semi-sweet next time so the tangy flavor of the chocolate chips is more noticeable. I will be making these all winter & experimenting with different flavors of chips.

Taco Seasoning I

Yum! Like other reviewers, I used 3T per lb, 1/2T flour, 1/2 water. I make a large amount to keep in the cupboard and add the flour just before combining with the hamburger. No more packaged seasoning mix for this family.

Eggnog Quick Bread

I make this recipe every year and give mini loaves as gifts. I did not change any ingredients and it always turns out perfectly. Technique is very important. Cream the butter and sugar first. Works best if the butter is very soft - room temp. Instructions say "stir just enough to moisten." Do not over stir. That will affect the texture. Definitely do not over bake. I only use unsalted butter. Just a taste preference. Butter has a definite flavor when baking, so if you substitute with other fats, the rum extract may seem too strong.

Salsa II

Everyone loved it! I was worried about the heat so I split the salsa in two batches and omitted the jalapenos in one batch just to be safe. I also skipped the cumin altogether. I liked the batch with jalapenos better. They add a very nice flavor. You can control the heat by omitting the seeds or only adding the seeds from a few peppers. The diced tomatoes definitely give the salsa a nice texture and fresh look. I will be making this again very soon and I plan on growing tomatoes this year so I can make salsa all summer! This recipe is a keeper!

Passion Bars

Wow! Yummy! I only had dark brown sugar. I would have preferred light. definitely gives a darker flavor but still very tasty. I will be baking again very soon and will experiment with other flavors of chips as other bakers have suggested. Thanks for the excellent recipe!

Shepherd's Pie

Very kid friendly recipe. I sprinkled some shredded cheddar cheese on top 10 mins before baking time was complete. I did not have mixed veggies so I used green beans. Will try with corn next time. This is a nice basic recipe that I will be making often!

The Best Rolled Sugar Cookies

Excellent recipe for making cutouts. Use the Royal Icing recipe and you will have professional looking cookies. I made gingerbread man shapes and plain circles, then frosted to look like basketball players and basketballs. Nice sturdy cookies. Keep what you're not rolling in the fridge and the dough will be easy to work with. This is now my only sugar cookie recipe!
