Bourbon-Mango Pulled Pork

Reviewed: Dec. 13, 2013
very good, tender, juicy. I was worried that the liquor would overwhelm the sauce but it was perfect! I used 4 smallish mango's sicne I had on hand and needed to use up. Will make again!

Smooth and Creamy Peanut Butter Pie

Reviewed: Feb. 10, 2013
3oz of cream cheese has to be a mis-print! I used 8oz and it was perfect- great consistency and flavor- super easy to make. I drizzeled hot fudge in the bottom of the pie crust before filling with the peanut butter mix and then drizzeled hot fudge on top- amazing!

Margarita Chicken II

Reviewed: Jun. 18, 2012
I thought the sauce was ok, but the hubs said it had too much honey. I didn't broil the chicken, but pounded thin and sautéed in a bit of oil so that it didn't dry out. This was super fast/easy to make, but the taste was just average.

Creamy Rice Pudding

Reviewed: May 24, 2012
wow! amazing and exactly what I wanted in a rice pudding! I followed the steps of the recipe exactly, but thought the times were a bit off. Cooking the rice and milk took about 35 minutes (not 20) and after tempering the milk/egg and adding back to the rice, it took closer to 10 minutes to get the right creamy consistency. The results were well worth the time and stirring!

Cream of Mushroom and Soy Sauce Pork Chops

Reviewed: May 22, 2012
Very tasty. Used low sodium soy and healthy choice soup- didn't measure the brown sugar but just rubbed enough into cover the chops. I squished it all up in a gallon size zip bag and stuck in the fridge overnight. I didn't have the too salty issues other reviewers had. After cooking for 8 1/2 hours on low, there wasn't much sauce left, but the chops were fall apart tender. I added about 6oz sour cream to extend the sauce. The results were a bit stroganoff-ish, tasty but very rich! Served over rice. Next time I will add an extra can of soup instead- and there will be a next time- this was great!

Best Lemonade Ever

Reviewed: Apr. 29, 2012
Reminds me of the lemonade that my southern granny used to make! I used 5 rather large lemons and got 1 1/2c. lemon juice- it was the perfect amount for the simple syrup and water ratio. Fantastic!

Irish Boxty

Reviewed: Mar. 7, 2012
I could taste a bit of the raw flour. I wonder if this is because I had to double the recipe as I got a bit excited on shredding the potatoes in my new food processor and ended up w/ more than 1 1/2 cups. I will reduce the flour a bit next time as the concept is very good

Double Tomato Bruschetta

Reviewed: Jan. 3, 2012
Very good considering I am not a huge tomato fan! Used fresh tomatoes from the garden and omitted the sun-dried tomatoes as I didn't have any. Subbed fresh mozzarella instead of the shredded. I accidentally layered backwards with the cheese right on top of the bread then tomatoes on top of cheese, was still good, but I can see how putting the cheese on top is helpful as it will help keep the tomatoes on place when you try to eat it! Will make again

Fresh Southern Peach Cobbler

Reviewed: Jan. 3, 2012
This was fantastic! I am not the biggest peach fan, but had some from a farmers basket I had to use up. Only variation to the recipe was only used 6 peaches, but they were humungous. Will definately make again.

Christmas Breakfast Sausage Casserole

Reviewed: Jan. 3, 2012
Very good breakfast to assemble the night before and pop in the oven in the morning! I did make some changes- 1)omited mustard powder (didn't have it) added fresh pepper, nutmeg and garlic powder in its place 2)increased from 4 to 6 eggs 3) reduced to about 1c. milk (didn't really measure it, just eyeballed) 4) didn't cube or toast the bread- cut off the crusts and arranged to cover the bottom of the pan- used about a 5X7 pan- (9X13 would have made the end dish VERY thin). 5) pour egg/sausage mix over bread, covered with cheese on top (not mixed in) and chill overnight in fridge 6) baked at 350 for 50 minutes and it was done perfectly!

i guess it turned out good, cuz i never even got to try it! I used 6 granny smith and 2 golden delic. apples to give more texture/flavor. I didnt lattice the crust as i didnt have time, and forgot to brush the crust w/ the carmel mix, but no complaints.

Rempel Family Meatloaf

Reviewed: Dec. 8, 2010
overall good recipe, but cook time was not near long enough, after an hour, the middle was still pretty raw, ended up cooking 1 1/2 hours. Hubby liked the sauce on top, I agree. Served w/ cheddar mash. potato's and salad. Will only make again if I have lots of time.

Hot German Potato Salad III

Reviewed: Dec. 8, 2010
pretty good, I did do 1 1/2 the amount of sauce as other reviews said there wasnt enough and I dont like dry potato salad. It turned out great, just the right amount. Sauce is tangy and a bit sweet at the same time. I felt like something was missing texture wise... not sure.

Fried Chicken with Creamy Gravy

Reviewed: Nov. 17, 2010
great chicken, good gravy too- just make sure you cook the oil/flour long enough to get rid of the "flour" taste. Once you add the stock/milk its too late.

Pizza Pinwheels

Reviewed: Jul. 4, 2010
very good, I used a little pizza sauce on the dough before putting on the cheese, and then sprinkled italian seasoning on top of the cheese. Rolled in saran and froze before slicing. Sprayed the pan w/ cooking spray, and it didn't ooze out or make a mess at all! I will be making again.

Grandma's Corn Chowder

Reviewed: Aug. 3, 2008
Easy and good, I used fat free half and half, 1/2 cream corn and half canned corn, reduced salt by 1/2 and added 2 tbs. chicken bouillon granules, added a dash of nutmeg and 1/2 tsp thyme. Good flavor, will make again, maybe reducing the half and half to 1 cup as final chowder was not as thick as I like.
