Angela's Awesome Enchiladas

Great recipe! Alot of prep time but worth it! I made a couple small changes: seasoned and cooked the meat on an indoor grill rather than boiling it. Used corn tortillas rather than flour as I find they hold up to being soaked in sauce better, especially for the leftovers. I also added bell peppers as I felt it was lacking veggies. Will definitely make again using more veggies and make a bigger batch! My boys say it's definitely a keeper!! Thanks for the great recipe!!!

Chicken Pot Pie IX

Awesome! Sauteed the chicken briefly with chilli powder, garlic powder, celery seed, salt and pepper THEN added the potatoes, water and 2 chicken bouillon cubes. Let simmer for 10-15 minutes. Added the frozen pea/carrot/corn mix LAST. Tasted and mixed every 5 minutes to check seasoning (added more seasoning of all of the above when needed). SAVE THE STOCK for SAUCE. Sauce: Doubled the sauce! I used the stock created from boiling the above veggies and chicken. Added all the above spices to the sauce as well - also used cornstarch to thicken (i've never had luck with flour, can taste it too much). Turned out amazing!! Couldn't imagine it without the spices added!! Key is to TASTE TASTE TASTE. Oh, and I used egg white on both of the bottom of the shell and the top. PERFECTION!!! Definitely a keeper!!!

This recipe turned out really well. Great way to get something into the system when you're not really feeling all that fabulous. Chicken bouillon may be used in replace of the veggie bouillon. If you are feeling unsure about the curry powder, use a small amount in the beginning, allow it to simmer for about 10 minutes and absorb the flavors, then taste it and go from there. Remember with curry powder, a little bit goes a long way. :-)

Fish Tacos

YUM!!! I made extra sauce and added it to a coleslaw salad mix (premade). I only added 1/2 a jalapeno and I even doubled the recipe and it was SPICY!!! WOWSERS!! Good though, but if you can't handle the spicy I definitely suggest probably only 1/8th of a jalapeno. I ended up making WAY too much and was able to heat it up and make it the second day as well, which was pretty fabulous!! I definitely suggest using a sustainable fish for this as our fish population is very rapidly decreasing. Thanks so much for the awesome recipe!!

Mom's Country Gravy

The recipe didn't work out so great for me. So in a desperate last minute attempt to save it, I decided to use Montreal Steak Spice, black bean sauce as the flavor adders, and water instead of milk to help thin it out. I also added a little minced garlic. All and all it worked out pretty good in the end, although not before the changes to the recipe.

Chocolate Thumbprints II

a pretty good cookie. the first batch i made with margarine. big mistake. they fell completely apart and didn't look to appealing. for the second batch i decided to whip out and pick up some butter. i used cold butter.. broken down with a fork.. then combined with my hands until it was a good enough texture to use the electric mixer. (first time i had butter stuck on my ceiling. oops :P). the came out much better. i skipped out the egg white addition at the end as they were sticky enough to hold the sugar on them. plus. i found the egg white made them stick to the pan and made the sugar not look so appealing after baking. the second batch looks exactly like the picture. yay!! :)
