Beef Stew VI

Reviewed: Oct. 31, 2009
Mmmmmmm! Instead of the beef bouillion and water, I used two 32 oz. beef stock boxes and approximately three cups of a nice red cabernet wine. I added extra carrots and potatoes and threw in a box of freshly sliced baby bella mushrooms but eliminated the celery since I'm not a big fan of it. Added two bay leaves during the cooking process for additional flavor. I also added garlic powder, onion powder and black pepper to a flour mix that I coated the meat with prior to cooking it. Putting the mix in a plastic bag and adding the meat will evenly coat the meat. Will definitely be making again.

Incredibly Cheesy Turkey Meatloaf

Reviewed: Oct. 31, 2009
OMG, delicious doesn't even begin to describe this meatloaf. I grated two large carrots into the mix and added brown sugar to the ketchup for the glaze. My husband who doesn't eat meatloaf leftovers kept raiding the fridge for little samples of it. Next time I made it I had to double it so there would be leftovers even after the midnight raidings. A definite addition to the meal rotation!

Chicken a la King I

Reviewed: May 22, 2009
Great recipe! Instead of canned mushrooms, I used an 8 oz container of sliced baby bellas. Omitted the green peppers and replaced that with a bag of frozen mixed veges (corn, peas, carrots and green beans). Added a finely chopped medium onion and used two 4 oz jars of pimentos (with juice) finely chopped with food chopper. I used chicken broth in place of water and boullion. I had to add extra broth toward end because I let it cook a bit longer while waiting for rice to finish cooking. Will definitely be adding this to my regular dinner rotation!!

It's Chili by George!!

Reviewed: Oct. 25, 2008
ABSOLUTELY amazing! This was my first attempt at chili and I will be sticking with this recipe! I used 3 cans diced tomatoes with one of them having jalepenos in them. I used hot mexican chili powder, curry powder and ground chipole powder. I used tomato sauce but as it simmered it started thickening up so I added a bottle of V8 juice to it. I simmered it on low for 3 hours and the house smelled nummy. I cooked up a box of elbow macaroni and added it to it. Served it with shredded sharp cheddar cheese and a dollop of sour cream. My husband was sampling it while it cooked and then ate 3 bowls of it for supper!!!!

Mexican Rice I

Reviewed: Sep. 11, 2008
Very tasty. I used a whole 10 ounce can of Rotel mexican tomatos. Chicken stock instead of water and a small can of corn niblets undrained. I used Basamati rice and had to add a bit more stock halfway through cooking time. Will definitely make again!!!

Wild Rice and Ham Casserole

Reviewed: Sep. 11, 2008
This was a very tasty dish! The ONLY change I made was that I sauteed an 8 oz. box of sliced baby bellas and added it to the mixture. I used shredded sharp cheddar for extra flavor versus just regular cheddar. Was even better the next night! Will definitely make this again.

Grilled Swordfish with Rosemary

Reviewed: Jun. 29, 2008
This was absolutely delicious. My husband wasn't to sure about trying a marinade on swordfish because he likes the taste of swordfish by itself but he was won over by this marinade. I followed the recipe exactly except I marinaded it for 3 1/2 hours and poked the fish to help absorb it better. I boiled the remaining marinade and basted the fish while on grill. Hubby used some of it as well and dipped his fish in it at the table. Defintely going to be using this recipe again. Thanks for submitting it.

Slow-Cooker Pepper Steak

Reviewed: Mar. 29, 2008
Absolutely delicious. I doubled the sauce ingredients because I knew I was going to serve this over Basamati rice. I added the pepper and a whole onion right away and the pepper consistency was perfect. I too, like other members suggested, added Worsteschirer sauce. I also added some sliced baby bella mushrooms since I had some in fridge I needed to use up. My husband has already requested that I make this again next weekend when we have company over!!

Chicken and Biscuit Casserole

Reviewed: Feb. 20, 2006
Since my husband isn't a biscuit eater I bought deep dish pie crusts (four to be exact). I filled two of the crusts with the filling and used the other two crusts as the top of the crusts. Almost like a chicken pot pie. I used frozen veges instead of sauteeing them. I used 2 cups vegetarian vegetable broth (to enhance the vegetable taste) and two cups fat free chicken broth. Could have used an extra cup of broth since the crusts soak up some of the sauce. Added sliced baby bella mushrooms to the mixture as well. Very, very delicious. Next time will probably try with turkey instead of the chicken. Would have given it 5 stars but I strayed from the original recipe a tad bit.

Sirloin Tips and Mushrooms

Reviewed: Dec. 23, 2005
I added chopped onion and minced garlic to the beef while cooking. Sauteed fresh baby bella mushrooms instead of canned. No need to add additional liquid. Used 17 oz. can of diced tomatoes and 2 8 oz. cans of tomato sauce, 2 bay leaves, 1 TB thyme and 3 TB beef base and simmered for an hour. Thickened broth right at end and served over noodles. One cup red wine added a unique flavor and wasnt too salty at all. Very delicious. Will definitely make again.

Beef Barley Vegetable Soup

Reviewed: Dec. 20, 2005
This was my first ever attempt at making soup. I was amazed at how well this tasted. I added extra barly to recipe and used beef broth instead of the boullion and added extra water as needed for the final cooking time. I cooked the soup for 1-1/2 hours extra at the end. Absolutely delicious!!!!!!!

Chicken Casserole Del Sol

Reviewed: Dec. 12, 2005
Very delicious! Was nervous about the curry but it was a delightful surprise. I did substitute the green beans for two crowns of steamed broccoli and used fresh sliced baby bella mushrooms in place of the canned mushrooms. Added diced pimentos for color. I used thin sliced boneless chicken breasts, diced and then sauteed them in the juice from the sauteed mushrooms and added all that juice to the sauce mix. oh yeah, I used ruffled pasta in place of the rigatoni since my hubby is a "pasta snob". Will definitely make again and again!

First of all, I love the name. Tasted delicious! I needed to add an extra egg and a bit of water to make the dough scoopable but otherwise was a really easy recipe. They disappeared the same night. Had to make another batch the next day!!!
