Easy Chicken Posole

YUMMY! I used a Costco rotisserie chicken that I boned and chopped instead of the chicken breasts and added an extra onion but otherwise followed the recipe- GREAT recipe! I will make it again for sure!

Butternut Squash Soup II

Awesome Recipe! I followed it pretty much to the letter except i did roast the squash first. I also added a little bit of nutmeg and a dash of curry powder. So good!

Bright Blue Monday Cake

This is a GREAT recipe! I doubled the recipe and put it in a 9x13 pan and it just barely fit! I added a splash of vanilla to the batter and used half brown and half white sugar for the crumb topping but otherwise followed the recipe as written. This will be my go to recipe for blueberry coffee cake. Thanks for sharing!

No-Knead Artisan Style Bread

Excellent Recipe! Like others have said- it is a VERY soupy dough. I made the dough last night around 7:30 and baked it today at about 4:30. I tried to follow the directions in the recipe and poured the dough out on a floured board to "form" it into a loaf, but it was a runny blob. Soooo- i scooped it up and put it back into a greased bowl and let it sit for another couple hours to rise again. To bake it I used my ceramic dutch oven and i did preheat it. It turned out fantastic! I am excited to make it again and experiment with roasted garlic and maybe even some cubed cheese. GREAT recipe- thanks for sharing!!

Hash Brown and Egg Casserole

I made this for Christmas morning and really enjoyed it. I used Simply Shreds potatoes in a 1 pound 10 oz bag and used the entire bag. I mixed a little oil and salt and pepper with the potatoes and pre baked them for 25 minutes to crisp them up before i added the egg mixture. I also used 12 eggs instead of 5 and it worked perfectly. I will definitely make it again- would be good with bacon and ham too...

Quick and Easy Green Chile Chicken Enchilada Casserole

I used chicken thighs and added a can of green chilis, an onion and a can of pinto beans to the chicken mixture. Overall this was pretty good- I also added the sour cream to the meat which made mixing it easier. I will make it again.

Layered Chicken and Black Bean Enchilada Casserole

I must admit, i am reviewing this recipe with a BUNCH of changes! I used chicken thighs, didnt have cilantro, used pinto beans instead of black beans, didnt have green chiles, and also didnt have sour cream so i used cream cheese instead.... It turned out GREAT!!!! Easy, quick foundation recipe that can be modified to suite what you have in your pantry.

Banana Oatmeal Bread

Changed just a couple things: used half applesauce half butter, half brown sugar and half white and used old fashion oats instead of the quick cooking. I am eating it hot out of the oven and its really good! It will be interesting to see what it tastes like when its cooled but i suspect it will be amazing!!!

Pancakes I

Doubled the recipe for 2 adults and 2 children! Used white whole wheat flour, added vanilla and cinnamon and these were GREAT!!! They are not super fluffy, so if you are looking for fluffy- this isnt going to be your recipe. However, they were perfect for us! Thanks for sharing a very simple pancake recipe.

Pumpkin Pancakes

Very thick batter. I used an entire can of pumpkin, skipped the vinegar, subbed white whole wheat flour and increased the spices. These are not sweet and need syrup in order to round out the flavor. They are good- just a bit thick- next time i will thin them out a bit. Thanks for sharing

Blueberry Oat Muffins

Awesome Recipe!!! Doubled recipe and used white whole wheat flour instead of all purpose and subbed half oil for apple sauce. I also added more blueberries because i wanted to use them up! For flavor, I also added cinnamon and vanilla and I didnt use the topping. Thanks for sharing!!!

Chocolate Cornstarch Pudding

I followed the advice of many reviewers and used 1/2 cup brown sugar instead of white, heaped the cocoa powder tablespoons and didnt fill the 1/4 measure cup up completely with corn starch. I also used skim milk because its all we buy. :) With the above changes- it was DELISH!! We are eating it warm as I type! Thanks for sharing.

Black Bean Brownies

My husband says these are 3 star brownies because they "aren't gross". However, I liked them!!! I followed the directions but did add baking powder and I used a packet of Starbucks Via for the coffee. They don't taste like beans- but the consistency is a bit off from a traditional brownie.

Seafood Cioppino

This was a really good base- I used 1.5 pounds of Cod fillets and a bag of seafood medley from Costco that had calamari, shrimp, mussels and scallops in it. YUMMY!!! I didnt use the white wine and subbed chicken stock for it, added one leek, one fennel and skipped the red chili pepper. Thanks for a great recipe!!!

Lower Fat Banana Bread II

This is a great recipe- I used whole wheat flour, added chocolate chips, cinnamon and a extra banana but otherwise followed the directions- YUMMY!! Next time I will cut down on the sugar but its great as written!

Sophie's Zucchini Bread

Excellent Recipe. I used whole wheat pastry flour in place of the all purpose flour, added nutmeg and more cinnamon and vanilla then the recipe called for. I also probably used closer to 4 cups of zucchini and cut down on the sugar- 1 1/2 cups instead of 2 cups. I will probably reduce it more next time- maybe 1 1/4 instead. I always use applesauce in place of at least half the oil, which i did this time and i might try using even more applesauce next time- maybe 3/4 cup applesauce and 1/4 cup oil. GREAT recipe- extremely tasty, great texture and flavor!!! Thanks for sharing!!

Cindy's Jambalaya

FANTASTIC!!!! I doubled the recipe and added 3/4 cubed ham and used huge shrimp- YUMMY. I did used brown basmati rice since its what i had on hand and needed to use it up. Next time I will use regular brown rice instead since the basmati rice fell apart a bit. This is going into regular rotation at my house!! I am going to attempt to freeze some- I hope it freezes well....

Maple Salmon

This was really good!!! The only thing I changed was i didnt use garlic salt since the soy sauce is so salty. In fact, next time I will use low sodium soy sauce and still not add the garlic salt. We didnt have time to let this marinate for the full time... but it didnt seem to matter much- it was still AWESOME!!!! It can only get better with more time! Thanks for the recipe! Oh yeah, I also added just a touch of cayenne pepper just to give it a tiny kick. YUM!

Whole Wheat, Oatmeal, and Banana Pancakes

Holy Cow- these are AWESOME!! My new favorite pancake! I used didnt use the dry milk, used all whole wheat flour and added cinnamon and used 2 smallish bananas instead of one. These came out tasting like a banana bread pancake. We didnt even use syrup! FANTASTIC!
