Snickerdoodle Cake II

I would have rated this a 5, but I read reviews beforehand and mixed 1/4 cup of sugar with cinnamon and added it to flour mixture before adding the egg mixture. I doubled the crumb topping. I think next time I might try to make this with an extra egg to make it even moister. It is definitely a 5 with tweaks!!!

Gumbo Casserole

I gave this 4 stars with changes. I live in Louisiana....So, these are the changes I made: I doubled the recipe, instead of dried onions, I used 1 whole chopped onion. i could not find campbells, so I used 3 cans of progresso, added gumbo filet, old bay seasoning, black pepper and Tony Chachere to taste, and I cooked it on top of the stove, stirring constantly on medium to medium high heat, adding the shrimp when all the rice was cooked.....and let sit for about 5 mins when done. Great starter recipe, tho

Creamy Ham Fettuccine

I have never made an alfredo sauce without butter, so I used 1 stick of butter, 2 cups of whipping cream, seasoned with garlic powder, salt, pepper, and onion powder. i used a whole package of cubed ham (I think it's close to a pound) I did not have enough parmesan on hand, so I used some parmesan and some feta cheese. i do believe any white cheese would do. I have made this before with shrimp, and added mushrooms, old bay seasoning and onions.....

Layered Eggplant Hamburger Casserole

I always read the reviews before I make something, to so what others have substituted or added. No one had tried Italian sausage. The people who said it had no flavor should try this! I had an eggplant handy, and had a taste for Italian sausage, and I find hamburger bland.....

Broiled Grouper with Creamy Crab and Shrimp Sauce

The first time I made this, the guys loved it, but it was off for me. The second time I made it I added onions and diced garlic to the butter before adding the cream. It tasted better but a little off, so I added just a little bit of sugar to taste. We are from the deep south, so I added extra creole seasoning as well. I added the crab and shrimp after the heat was off to keep it from cooking to nothing. Delish.

Shrimp Kisses

Very good, i had had this before, and did not see how they kept the cheese in the bacon....after playing with the food for a little while, i precooked the bacon until slightly brown, but still rubbery, and left the bacon slice whole. I put a slice of pepper jack slightly thinner than the bacon directly on the bacon, then placed chopped jalapenos on chesse, and wrapped shrimp fully with the bacon slice. the extra wrapping kept the cheese in better.

MMMMMM, very good and simple. simplified more by whipping cream in blender on puree.....same results. Took others advice and blended chocolate into whipped cream.

Sweet Pasta Salad

Read other peoples reviews, and decided to use evaporated milk instead of sweetened condensed milk. Added the one sugar, and it was perfect. Added a package of steamed brocolli as others did, and cut up a jar of whole roasted red peppers, since i did not have any bell peppers. Also had a jar of calamata olives on hand. Added those. Used another reviewers idea of using balsamic vinegar for 3/4 of the vinegar......this recipe came out excellent, the only thing i would have liked to add was a little grated cheddar cheese, and maybe a few boiled eggs when serving. With the minor changes, this recipe was excellent!

Pork Tenderloin in Bourbon

Baked Fish with Shrimp

This recipe is awsome if you add crabmeat, onions, garlic, salt, pepper and tony cachere to taste to the sauce....nothing bland about it. First try I used red snapper, but didnt like it....Next time I will put it over Tilapia....a winner!

Deli Style Brisket

Added Tony Cacheres (I live in Southern Louisiana, we have to have more spice)And extra salt and pepper to taste, and cornstarch to desired consistancy. They were right, gravy is to die for and excellent with hawaiian rolls or whatever bread you have handy. Definitely a keeper!
