Scrumptious Strawberry Shortcake

Hands down, this is the best shortcake recipe I have ever made. I did have to add a couple of extra tablespoons of cream to make the dough less crumbly, and it worked out very, very well.

Caramel Custard

I don't like custard, but I loved this! We used a torch on the sugar because my dish wasn't broiler safe, and it came out perfectly.

Best Brownies

These brownies were very good! I had to add a tablespoon or so of milk to make the frosting into something resembling frosting - until I did that, it was just a crumbly mess. Excellent flavor, though!

Rhubarb Crunch

I used about four cups of rhubarb, kept the sugar at one cup, and added a can of pineapple tidbits. It was good. Next time I'll put a pinch of salt in the topping. It tasted a little flat.

Rempel Family Meatloaf

Pumpkin Muffins II

I was scared off by the amount of spices in this recipe (and I'm the person who ALWAYS doubles the spices called for in pumpkin pie!). So, I made it with 1/2 tsp. of cloves, 1/2 tsp. of allspice, 2 tsp. of cinnamon, and 1 tsp. of nutmeg. I also cut the oil back to 1/3 cup and the sugar to 1 1/2 cup, based on reviews I read, and I too substituted a cup of oatmeal for one cup of flour, to add a little texture. Made this way, these muffins are pretty much perfect! Moist, not too dense, with just the right amount of spice.

Scrumptious Salisbury Steak in Mushroom Gravy

This was VERY good. I used fresh mushrooms and the gravy didn't thicken, though, so I had to use some cornstarch, which was no problem at all. It does make a LOT of gravy!

Pineapple Rhubarb Pie

This didn't work so well for me. If I make it again, it will be with MAJOR modifications. The tapioca was hard, and it didn't really thicken. I would also use pineapple tidbits or crushed pineapple instead of the chunks, so that the texture is a little closer to the texture of the rhubarb, which dissolves quite a bit when baked. Overall, the flavor was ok, it was just the texture (and the hard bits of tapioca) that we didn't like.

Baked Teriyaki Chicken

Hands down, this is the best teriyaki sauce I've ever had. I cooked the chicken on the grill after marinating it in the sauce for two hours, and basted it during cooking with additional sauce. Heaven!
