About this Cook
Single, happy and love to entertain.
My favorite things to cook
The things that bring people together--indulgent appetizers, comfort foods and cocktails to go along!
My favorite family cooking traditions
My mother's Tex/Mex chili-cheese enchilidas and Mimi's pecan pie. Good Texas food!
My cooking triumphs
Making a Monte Cristo sandwich that was identical to ones at the chain restaurant. It wasn't difficult, but it was a triumph knowing that I could have it at home even though the restaurant closed.
My cooking tragedies
You know the rule about breaking eggs into a seperate bowl instead of straight into the mixer? I now follow that rule. I ruined a creamy tres leches cake by accidentally adding egg shell. Sort of ruined that whole creamy effect.

Ice Cream Sandwich Dessert
Cannot go wrong--total winner! I used one layer of caramel sauce, and on another layer fudge sauce. I added Heath toffee bits to each layer. There was not a bite left and we were all discussing the variations you could make of this according to your tastes. I will take this to every party this summer.

Roasted Garlic Cauliflower
This is great with or without the cheese! I can't wait to make this with broccoli.

Nana's Squash Casserole
Being from Texas, I knew I'd more than likely prefer a southern squash casserole recipe. BINGO! It's delicious. I followed Alyssa's comments and did add 3 cups squash and loads of sharp cheddar. The butter, cornbread, squash and onions come together perfectly. Kiss that Nana for me!
