Gourmet Mushroom Risotto

Reviewed: Aug. 26, 2010
This was absolutely fabulous! I'm not a huge fan of large pieces of mushroom, so I only used 1/2 lb of portabello mushrooms, which I diced up fine before sauteeing, but it turned out creamy and delicious! Thank you for such a wonderful recipe.

Curry Chicken Salad

This was great! I added a full teaspoon of green curry, a green onion, and used fat free Miracle Whip instead of the low-fat mayonnaise. Served in lettuce wraps and everybody loved it.

Stuffed Peppers My Way

Reviewed: Feb. 15, 2010
I love these stuffed peppers! They are so easy to put together, and look quite impressive, too. I love them as a side dish to fish - Makes a nice, light side without having to use plain rice or pasta. Thank you!

Scott Ure's Clams And Garlic

Reviewed: Feb. 15, 2010
This is a great recipe. My grocery store didn't have clams, but they did have mussels, so I used those. I also added some diced tomatoes for a little color. Next time I will definitely add a little more garlic, though. Tossed the mussels with linguine and then served topped with "Quick and Easy Alfredo Sauce" from this site. Delish!

Quick and Easy Alfredo Sauce

Reviewed: Feb. 15, 2010
Sooooo delicious! I didn't have parmesan on hand, but I did have grated Romano, so I used it and it was great! I made steamed mussels using "Scott Ure's Clams and Garlic" recipe from this site, tossed the mussels and their sauce with some linguine and topped it with this Alfredo sauce. An absolute keeper! Thank you so much for the best and easiest Alfredo I've ever made!

Easy Garlic and Rosemary Chicken

Reviewed: Jan. 22, 2010
Delicious! I brined my chicken for 1/2 hour before preparing and putting it in the oven, and used less rosemary than originally called for. Absolutely moist and delicious! Thank you!

Maple Salmon

Reviewed: Jan. 11, 2010
So delicious, quick and easy too! I didn't have any garlic cloves on hand, so I only used granulated garlic, black pepper, soy sauce and maple syrup. I saved the marinade and reduced in on the stop to use as a topping after the fish had broiled. I served it with a tomato basil risotto. Will definitely make again. Thank you for a wonderful recipe!

Burgundy Pork Tenderloin

Reviewed: Oct. 28, 2009
This was absolutely delicious. I added 2 packets of brown gravy mix to thicken it up a bit, and instead of chopping the celery, I sliced it thinly like the onion. When I drained the gravy, I kept the onion and celery and served it as well. Everybody loved it! Will definitely make this again.

Peanut Butter Cup Cupcakes

These turned out great! I used butter instead of shortening. I'm sending them with my husband for his work crew - you know how well men, chocolate and peanut butter go together!

Fluffy Peanut Butter Frosting

The flavor was great! Not too strong, but definitely peanut butter. I found it a little difficult to spread, however... even after adding more liquid.

Baked Salmon II

My husband and I are huge salmon fans, and this recipe did not disappoint. I did reduce the amount of oil, though, and took the suggestion of others by opening the packets for about 5 minutes at the end. Delicious!

Savory Garlic Marinated Steaks

I added extra garlic to this recipe. It turned out absolutely great! I had extra steaks left over (I doubled the recipe), and froze them in the marinade. They were still juicy after being BBQ'd.

I made this several times, and it was wonderful! I doubled the recipe for the streusel topping, as my husband absolutely LOVES pecans. Will make this again and again.

Pecan Pie Bars II

I have made this recipe several times in the past, and even traded pecans for raisins... makes it almost like one giant butter tart. A great recipe!
