I love having guests over regularly and entertain as often as I can.
My favorite things to cook
There really isn't anything I don't love cooking, whether it's an authentic italian feast, baking muffins, or whipping up a casserole. I really enjoy my time in the kitchen.
My cooking triumphs
I made a pot-roast, mashed pototoes and gravy for dinner, and on this particular day, one of my daughters held her head in her hands and said, "This is so good, I think I'm going to cry!" I love it!
My cooking tragedies
One thing I've learned NOT to do: Never try cooking jalepnos or other hot peppers in a frying pan and forgetting about them. Your eyes, nose, throat - they all burn terribly.

Gourmet Mushroom Risotto
This was absolutely fabulous! I'm not a huge fan of large pieces of mushroom, so I only used 1/2 lb of portabello mushrooms, which I diced up fine before sauteeing, but it turned out creamy and delicious! Thank you for such a wonderful recipe.

Curry Chicken Salad
This was great! I added a full teaspoon of green curry, a green onion, and used fat free Miracle Whip instead of the low-fat mayonnaise. Served in lettuce wraps and everybody loved it.

Cream of Mango Soup
