Grilled Salmon I

Wow and thanks. It was delicious. Make sure to lightly oil grill/grill pan. Move it a bit on the grill after a minute or two to prevent it from sticking to the grill since the sugar will carmalize. Used kroger brand frozen salmon fillets thawed. Putting skin side down first, cooked for five minutes each side, then let sit in serving dish for 5 mins skin side up to rest. I substituted extra virgin olive oil for vegetable oil, added a dash of ground red pepper. I used my cast iron grill pan. Served with rice and green onion kimchee and the kids liked it as well. Son said it would be great for chicken also. Thanks for a quick easy recipe.

Oven Roasted Potatoes

My family loved this. I added 2 T melted butter and cooked this at 425 degrees for 35 mins stirring once and then broiled it for 3 mins. It turned out so crispy and delicious. I also used about 8 small potatoes that were left in the bottom of my potatoe bag. Thanks for the recipe.

Cornish Finnish Michigan Pasties

Excellent recipe. My whole family(even kids) enjoyed this. I did add about a tablespoon of cumin, 2 T worstershire, 2 t of garlic powder and it came out not at all dry or tasteless. My husband is from MI and he loved it. Make sure to chill the shortening prior as well and the pastry will be so flaky and delicious.

Baked Potato Skins

I followed others advice in EVOO and blotting out inside prior to adding the cheese. I made 24 halves for 5 people and they were enjoyed by all. Everyone of them. So much healthier and cheaper than the restaurant. Thank you for the recipe.

Chicken Tortilla Soup III

Excellent. My whole family found something that we all love equally.(Which is rare, as my kids and husband are very picky.) I did as suggested by adding half milk and half half and half. I also used stock from the chicken that I cooked for it. About 4 cups to thin it. And 3 cups of home cooked black beans. I also just used the tortillas and cheese as a topping.And just half a large jar of salsa since I don't have any fresh made. And we still have plenty left over. My 11 year old son said it is now his favorite food. And he never likes vegetables. Thank you so much. Meal times will be so much better now.(At least when I make this.) :)
