Sugar Plum No-Bake Cookies

Reviewed: Dec. 29, 2011
I made these for a cookie giveaway and they were a hit, even with the ppl that don't care for coconut. It did need 1/4c extra crumbs to make them stiff enough to roll.

German Chocolate Cake Frosting II

Reviewed: Dec. 29, 2011
Added 1tbs cornstarch to the milk before starting the heat, turned out great. You must remember that it takes a while to thicken, just like gravy.

I think it would've been better with just 2 cups of flour.

Chocolate Butter-Creme Frosting

Reviewed: Nov. 29, 2011
I used this recipe to frost the "4 egg yellow cake" from this site. I doubled it and it was enough to cover two 9in cakes with just a little leftover, so I added it to the top of the cake. It was perfect. Side note: confectioners sugar and butter will not be "light and fluffy" it will look like wet sand. Just continue to add the rest of the ingredients and mix, it'll turn out fine.

Four Egg Yellow Cake

Reviewed: Nov. 29, 2011
After reading the reviews about "cornbread texture" I decided to use half shortening/half butter and shorten the baking time. It was perfect. I used two 9in round pans and only baked it for 35 mins and rotated the pans 15mins into the baking. I probably could've gone a few mins less and been okay. I lined the bottom of the pans with wax paper for easy release. I made this for a birthday cake for my two friends and they both loved it along with my other guests.

Olde Tavern Spoon Bread

Didn't change a thing and it's perfect. Just like I remember it from my childhood...with a large pat of butter.

Pumpkin Spice Cupcakes

Reviewed: Oct. 18, 2011
I gave 4 stars because I opted to use 1/2c of oil instead of butter and 350degree oven for 20mins. I also used 1.5c pumpkin because we roasted a pie pumpkin and I wasn't going to leave 1/2c of pumpkin to waste. They aren't going to be light because of the dense pumpkin, but mine were plenty fluffy, moist and tasty. You won't need to double the frosting unless you are piping, otherwise a single batch is fine.

Made these for lunch during Sunday football. Doubled the recipe and did everything but brush them with egg. Was pretty good.

Banana Macadamia Nut Bread

Reviewed: Mar. 7, 2011
After reading the reviews I made several changes. If it's not listed, then it stayed the same: 1/2c water 1c overripe banana 3c bread flour 3tbs brown sugar 1tsp yeast It turned out perfectly for a 2lb loaf in my bread machine. Moist and "banana-y" Only 3* because of all the changes made.

Chocolate Fudge Buttercream Frosting

Reviewed: Jan. 17, 2011
Tastes great but not for cupcakes as they run off the sides of the cake and you can't pile it up. Good for a cake that's going to stay in the pan it was baked in.

Herb Quick Bread

Reviewed: Aug. 28, 2010
First thing to remember that this is a "quick bread" not a "yeast bread", so it will be dense. After reading reviews of blandness and dryness I made some changes that made a quite taste outcome. I added 2 TBS of melted butter and another 1/4 cup of milk. I used 1 TBS EACH of caraway seeds (crushed in my hand), herbs de Provence, oregano and parsley. I upped the salt to 1 tsp. And I added a dash of onion and garlic powder just cause. I liken it to a biscuit made in a loaf pan. 4* cause it was a good starter recipe, it just needed some help.

Chicken with Peach Stuffing

Reviewed: Aug. 8, 2010
Diced peaches wouldn't work because they would get too mushy. Use the sliced peaches and cut into chunks or wait and cut them on your plate. Overall it's a really good dish.

Peach Cobbler I

Reviewed: Aug. 8, 2010
I made this recipe as is and used a 9x13 pan. I divided the dough-like batter into thirds and put one on each end and one in the middle and as they baked they spread out to each other. I think the peaches needed more spices or it would've been 5*.

Sarah's Salsa

Reviewed: Aug. 23, 2008
The first time I made it I found that 1/3c of cilantro is *way* too much and overpowered everything else. I've cut back on the cilantro and instead of a can of tomato/chilies I use a can of diced chilies.
