Spicy Sweet Potatoes

Excellent change from sweetened sweet potatoes. I chunked an onion and tossed it in with this recipe and left out the brown sugar altogether. Yum. This will be a keeper.

Creamy Rice Pudding

I love rice pudding and I've been trying to make a respectable one for years. I just made this and it far surpasses respectable. The only thing I changed was that I used almost a cup of long grain rice instead of 3/4 because it was all that was left in my package. It turned out wonderfully creamy. I added the tsp of vanilla and a dash of cinnamon and a dash of nutmeg in the last step. Fantastic!!! Thanks Erica!!

Blueberry, Berry Zucchini Bread

At 461 cal per slice, no wonder it's good ;) A bit too rich for my body so: I also subbed whole wheat flour for 1 cup of the flour, 1/2 cup applesauce for 1/2 of the oil, and I only used 1 1/4 cups of sugar. I added 1 tsp almond flavoring and about a cup of berries (strawberries and raspberries aside from the fresh blueberries and about a half cup of juice that was with them. Baked in 2 regular loaf pans at exactly the same time. Delish, moist, flavorful. A keeper! The only mistake I mad was that I let a couple of seeds from the rather large zuchini get in and next time I won't do that. (Crunch)

Not Your Average Grilled Chicken

What a wonderful way to grill chicken! I couldn't believe that I've been cooking all of these years and never figured this out before. Butterflying the chicken is a brilliant idea. Chicken gets cooked through evenly without charring the meat. I've used this several times already with different marinades and barbeque sauces, including this one. Thanks for posting!

That Good Salad

Yep, this is one good salad! I subbed bacon bits as it's what I had on had. Excellent!! I served it for company last week and they couldn't get enough. This is a keeper I will make often.

Salmon Chowder

I'm not a big salmon fan but have been looking for new ways to en-corporate it into our diets. This was a wonderful full bodied flavorful soup. I will look forward to this again, especially on a cool evening when you need something warm and filling. I made this as written except left out the celery. Excellent new keeper!

Barbequed Hamburgers

Where I grew up they had a place that served barbqued hamburgers with a slice of sauteed onion on top. Delish. I thought this was sweet. Next time I'll cut the sugar to 1 or 2 tsp and sautee those onions for on top.

I liked this recipe. Instead of celery I put in a can of green chiles, and a little basil and oregano to spice up flavor. I doubled the recipe and had too much left over. It was better the second time but too mushy to freeze. Next time I'll make just one recipe.

Japanese Cheesecake

We liked this very much. Not what you think of an American cheesecake - rich creamy lucious. This had a very nice flavor, not too sweet, not too rich and it doesn't hang on the hips and the arteries either. I've already made it again. Will still make a regular cheesecake from time to time but this was a very nice treat for a change.

Blueberry Oatmeal Coffee Cake

This was very good. I used dried blueberries as that is what I had on hand and it still turned out very nice. Moist, tender and flavorful, not to mention fairly easy. I'll make this again(next time with fresh blueberries).

Banana Oat Bread Pudding

My husband and I have been looking for ways to incorporate more whole grains and fruits into our dite. This one is a keeper - with no eggs or flour and little sugar, it is a moist, healthy and tasty way to get your oats and fruits. I did add cinnamon, vanilla and twice the raisins. My husband rated it a 10! Next time I will try canola oil instead of the margarine.
