Soft Christmas Cookies

followed the exact recipe and these are amazing! The dough is a little crumbly and hard to work with if its very cold but once it warms up a bit its a nice easy dough. I refridgerated the cut out cookies for 15 min or so before putting them in the oven to help them retain their shape

delicious flavour and texture - i did find that i had to leave it in the oven a little longer than the recipe called for - otherwise it was great. i did supplement the bananas with some applesauce to make up the 2 1/3 cups and added a handful of chocolate chips

Chocolate Chip Muffins

even when adding more milk and applesauce, I found this batter very tough to work with and the gluten developed very quickly- so I had to let it set for 20 minutes before scooping into the muffin tins. They tasted more like scones as opposed to muffins. Also 3/4 cup of chocolate chips was plenty!

Strawberry Bread

great recipe - like the others i modified it and it turned out well 1) i pureed 4 cups of straweberries until they were a part minced and part pureed 2)I reduced the sugar to 1 cup 3) reduced oil to 1/2 cup and then added 1/2 cup unsweetened applesauce - baked 12 muffins and 1 loaf pan - took it to work and it was gone in 10 minutes!

delicious recipe! not too sweet and good amount of almonds. I do recommend toasting the almonds slightly beforehand to enhance the almond flavour. also wait the full 20 min before slicing the warm loaves as it is much easier and makes for a cleaner looking product.

Low-Fat Blueberry Bran Muffins

these are the most fantastic low fat anything I have ever tasted. They are so easy to make. i have tried fresh and frozen blueberries. I have used all bran cereal and soy milk instead of the wheat bran and milk and they are just delicious. An A+++ recipe.

Creamy Chocolate Frosting II

really tasty although I would recommend following the directions on the recipe. I tried to make it using the microwave to melt everything but it turned out to be more difficult. I added a bit of cocoa powder and cream of tartar to make it taste richer and to let it stiffen up a bit. Overall a really delicious frosting!

Rave reviews from everyone even the non-ginger lovers and my hard to please mother! Extra points for this recipe being so easy to make. I doubled the cinammon and cloves and refridgerated the dough as per other members suggestions.
