Zucchini Parmesan

I did add some bread crumbs to prevent the dish from being watery and also added some grated parmesan. Loved it! Thanks for sharing.

Fisherman's Quick Fish

Loved this recipe!! I used blue-gill and bass (a mix of fresh fish from my dad's fishing trip). I was able to throw together my own "creamy italian" dressing by adding a tablespoon of miracle whip to some light italian dressing. My husband & I devoured this one! I may try to use unseasoned cornbread in place of the chips next time...

Crunchy Bagel Chips

Great way to use up day-old bagels! I made a savory batch using plain bagels with olive oil & creole seasoning and another batch using cinnamon raisin bagels with vegetable oil, cinnamon & sugar. I mixed each batch in a gallon ziplock bag. I took a chance bypassing the melted butter, and was glad I did.

Peanut Butter Fingers III

I followed the recipe as given and give it 4 stars for easy-to-make bars & okay results. I didn't have time to read through reviews before I made them. The bars were missing something... it just didn't have a "wow" flavor or texture for us.

Ice Box Fruitcake

I really want to like this recipe as-is for all the great ingredients & unique preparation (relative to my usual Christmas cookie baking), but it fell flat for me & my family at Christmas. Waiting all that time for the cake to "age" and unwrapping all the layers of foil & saran wrap was anticlimatic to see that beige blob in the dish. Family members had to be cajoled to give it try and the reviews were mixed from a "mmm - better than I thought it would be" to "blah." Being a sweet-tooth, I thought the cake tasted pretty good, and would describe the taste & texture as glorified cookie dough. If I were to use this recipe again, I would take it one more step by cutting the cake into bite-sized pieces and dipping them into chocolate in order to hide the beige coloring. I probably wouldn't keep the word "fruitcake" in the recipe title either... when I said the name of this recipe people wrinkled their noses before the first layer of foil was pulled.

Zucchini Brownies

Love this recipe! It is a great alternative to making traditional zucchini bread, especially as this one does not call for eggs. The large zucchini I shredded made about five to six cups, so I decided to split the batter into 3 pans (two 8x8 and one pie plate). They all baked up great. The texture is cake-like... maybe I could have spread them into four pans for a more chewy consistency? Nonetheless, I will be making these again and sharing the recipe with others.

Yellow Squash Casserole

Added 5 strips of crumbled bacon. Sauteed the onions and squash in the bacon drippings. Added some feta cheese (only because it needed to be used up before spoiling). This almost had a "quiche" taste & texture. We will definitely make this again. The leftovers were even better. Highly recommend.

No Bake Camping Cookies

The dough was difficult to roll, but not impossible. It was very similar to making macaroons. I was trying to save time (and heat) by choosing a "no-bake" recipe, but the rolling time made up for it. Enjoyed the flavor, but my best rule of thumb is when my husband doesn't come back into the kitchen for another handful...

Corn Tortilla Chips

We absolutely devoured these chips. For our tex-mex dinner tonight, I fried the chips before preparing the refried beans, corn and rice, etc. But these were so good that I decided to just make nachos. I used only 3 cups of oil and added a little garlic powder as suggested by another reviewer. We will make these again and again - no more store chips : )

Cheesecake Brownies

I was disappointed, especially after reading such rave reviews. I followed the recipe step by step. I had to bake the brownies for about 30 additional minutes more than instructed on the box, as both layers were still dripping wet. And while the taste was melt in your mouth, the texture was a real mess. As I attempted to slice them into squares, the cheese layer separated from the brownie layer, while the brownie layer fell into pieces. Nearly a quarter of the pan ended up as a crumbled mess. I finally gave up and told my husband we have some delicious brownie bits for ice cream sundaes. So 2 stars for the taste only.

Cornbread Salad I

2 stars for the recipe as is. I revised the ingredients & directions in an attempt to improve taste & texture: miracle whip instead of mayo, homemade cornbread vs corn bread mix, black beans instead of pinto, mexican style corn vs plain corn, cubed cheese instead of shredded cheese. Also: make a mixture of the beans, corn, peppers, onions, bacon and cheese - don't just "layer" the ingredients one at a time; drizzle some dressing on the bottom layer of cornbread before adding the bean mixture. These changes made a much better salad.

Ham Bone Soup

What's great about a recipe like this is that you can tinker with some of ingredients and easily create delicious soup. I added 1 can of seasoned collard greens just to add color & another veggie and used a can of black beans & 2 serrano peppers, as I didn't have the kidney beans or the green bell pepper on hand. It was great to see how every inch of the ham went to use instead of being thrown away. We loved this soup!! Thanks for submitting! : )

Extra Easy Hummus

I cut back to 1 tsp plus a dash of cumin as someone suggested. For those who thought this recipe was bland, I served with cracked-pepper/olive oil triscuits and the rosemary/olive oil triscuits which added lots of extra flavor. But I thought it tasted great all on its own - I must not be a hummus snob... Thanks for sharing this recipe! I will never buy $5 8 oz containers of hummus again : )

Vegan Chocolate Cake

I made this recipe as cupcakes (drizzled with chocolate rum sauce) for an office birthday party, as I didn't want a vegan colleague to be left out. Everyone loved them! Even my husband (one of the biggest carnivores on the planet) enjoyed these. Highly recommend - moist & tasty! Will definitely bake these again.
