Moroccan Lentil Soup

I didn't have some of the ingredients so I just used this recipe as a base.. I didn't have carrots or celery, but I did have a couple of cups of left over tortilla soup (with no tortillas in it!) and added that to it which had a few more beans and some corn, and it turned our really well. My kids loved it!

Lemon Blueberry Bread

I left out the nuts because I wanted to send it to school for the kids' lunch and their schools are nut-free, but it still tasted really good. I have already passed the recipe on to someone else who tried it and loved it.

Thai Beef Salad

I added carrots and snow peas as well. I also made a little less sauce than the recipe suggested and served the salad with rice. Whole family loved it, including my fussy 7 year old.

Tortellini Soup I

A good hearty soup that got a thumbs up from the whole family. I thought I had sausage in the freezer and found I didn't, so put some chopped salami in instead. I served it 'as is' to the kids and added a little sea salt, pepper and Tabasco Sauce to mine ;)

Pesto Pepper Tortellini

I served this with grated cheddar on top. The kids really enjoyed it. While I like red peppers, I think I'd prefer it with some other vegetable such as perhaps broccoli.

Turkey Soup with Root Vegetables

The kids (including the guest kid) each had four servings of this soup, so I'd have to give it a thumbs up. I did add a little tiny bit of chopped meat to it.

Spinach Enchiladas

This was delicious! I had to do a bit of substituting due to not having all the right ingredients. I used half a regular onion instead of the green onions, and then I substitute spinach with some arugula and dandelion leaves from the garden. But it tasted soooo good!

Thai Steak Salad

Very nice salad, but I halved the dressing/sauce and felt there was plenty. I also used brown sugar (to taste) rather than Splenda. I added carrots and snow peas for some extra colour and flavours. It was really enjoyed.

Uncle Jesse's French Toast

I made this as per the recipe but minus the cloves as I didn't have any. It tasted okay, but kind of just like eggs cooked into bread with some spices added. After the first few slices I made, I took the remaining mixture - added some milk and a little sugar and cooked the rest of the bread that way. I think the sugar brought out the flavours of the spices. The kids enjoyed the French Toast far more after my alterations.

Asian Turkey Lettuce Wraps

Was a good recipe. Before rolling, I sprinkled the meat with some lime juice and sweet chili sauce, and added some cilantro. I also made it with ground organic chicken meat rather than turkey.

Almond Pear Muffins

After reading the other reviews, I added a little more sugar to the recipe. I also actually didn't add the chopped almonds at all. Supplemented yogurt with thickened cream (since that was what I had in the fridge). Sprinkled a little cinnamon sugar on each muffin. Totally delicious served slightly warm!

Zucchini Gratin

I give it five stars with the adjustments I made. After reading other reviews, I left out the salt in the mix. And rather than mixing the bread crumbs with half a cup of butter, I just mixed them with the cheese and sprinkled on top. It was very tasty. Two of my kids didn't like it, but that's only because they don't like zucchini. They ate the rest of it.

Green Chili Chicken Burgers

I followed the recipe exactly except I didn't add as much chili as suggested because I wasn't sure how spicy it would turn out for the kids. Everyone enjoyed it. With the guacamole, I left out the sour cream and replaced it with half an onion which I also added to the food processor. I served with a delicious mango salsa which complimented it perfectly.

Mango Quesadillas

I really enjoyed this. I did make a fair few changes though, mostly because I didn't have all the ingredients. I used real chicken, for one. I didn't have black beans, so used half a can of 'mixed beans'. Didn't have arugula, but added fresh cilantro instead. Also added corn kernals and cumin (because I like it). Only down side is that some of them were a little messy to move without the filling falling out. But good recipe. Loved the mango in it for something different!

Pierogi Casserole

I'm not sure about how healthy this is, but it tasted good. After reading some of the reviews, the changes I made were (1) adding some shredded cheese to the mashed potato, and (2) adding a cheesy white pasta sauce on to the top layer of lasagne noodles before covering in cheese (to soften it).

Moroccan Tagine

This turned out to have a delicious taste! I did the vegetarian option, used about five fresh chopped tomatoes, and added a couple of extra vegetables. Served over rice. Very good!
