Pumpkin Soup

I admit, I didn't read the other reviews this time which I normally do, so made it pretty much to the recipe. I used fresh pumpkin which I partially cooked then pureed with a little water in my Magic Bullet. I had to give it five stars because my extreme pumpkin-hating 8 year old ate it and even asked for seconds! Mind you, it did take a lot of persuading for him to taste it, and he didn't have any other food options.

Great Easy Waffles

I have to admit, I didn't do any of the separating. I just added all the dry ingredients, then beat the eggs with a fork a little in a cup, threw that in, and then added the rest of the liquid ingredients. Then I mixed it altogether with an electric mixer. Tasted great! Quick and easy.

Stir-Fried Vegetables with Chicken or Pork

I gave five stars, but I also made some adjustments and so I can't say if I would rate it the same had I made it straight from the recipes. At the beginning, in the oil, I added some Thai green curry paste to make the flavour more interesting. I omitted the salt half way through, and just used two packets of pre-cut stir fry vegetable mix for speed. Made this way, it definitely tasted good.

Panna Cotta

This was a really easy recipe that worked out well! I didn't have any ramekin dishes, so instead I poured the mixture into coffee mugs. I don't know if it helped or not but before adding the mixture, I lightly sprayed with canola oil spray. They popped out of their molds really easily and neatly and I served with mango slices and passionfruit pulp drizzled on top.

Never Enough Green Bean Casserole

I really altered this recipe to fit what I had in the kitchen. Like some of the other reviews, I used frozen beans and fresh chopped mushrooms. Instead of the processed cheese, I added some leftover cheese and onion dip. Rather than bacon bits, I added chopped chorizo sausage. As I far as I know, you can't easily get french fried onions here in Australia, so I topped it with crushed cornflakes and grated cheese. It tasted really good. I have made it before following the recipe closer and it tasted great that time too!

Hurricane Carrots

It tasted okay, but also healthy. But it wasn't overly tasty or exciting. It probably would have been better with Imae's suggestion to add things like cranberries and celery as suggested. The apple started going brown quickly so I added a little lemon juice to stop it. I also replaced the vegetable oil with olive oil and cut down on the amount of it. The kids didn't enjoy it, but ate it reluctantly (only because I told them I spent a long time cutting and grating the ingredients). But definitely would probably appeal more to health conscious adults than kids.

Fresh Vegetable Stir-Fry with Peppery Orange Beef

To be honest, I didn't have high hopes for this dish. I've made a lot of stir-fries, and while good, most of them are fairly average. But this one was a really good flavor - not too strong or anything, but interestingly tasty! I was really impressed! I think it could be good with different types of meats too. I used kangaroo, because I had it on hand ;) I also added carrots.

Jalapeno Popper Wontons

These were nice, however, something about the texture of the wonton wrapper didn't feel right with the flavor to me. I tried one while it was still hot and it was quite good, then I displayed them on a plate. By the time the rest of them were being eaten they had cooled (quite quickly) and with the wonton wrapper, seemed a bit average to me. So maybe it was something to do with them being cool. I'm not sure. I probably wouldn't make them with the wonton wrapper again.

The smell of those vegetables cooking in that sesame oil filled the house and was so good!! After reading some of the other reviews, I added some grated ginger which was a good addition. I also added some chopped up mushrooms. Delicious with the dipping sauce, and a tasty way to eat lots of vegetables!

Crunchy Lettuce

A tasty salad that was fairly quick and easy to make. The dressing tasted 'right', however, it had quite a bit of sugar in it, and wasn't overly exciting. My kids didn't care for the dressing too much. The toasted sesame seeds and almonds were a great addition. If you are using crunchy chow mein noodles, add them at the last minute, and if you think there will be left overs, only add the crispy noodles to what you are going to eat. They can go soggy very quickly with all that dressing!

Moussaka Cottage Pie

I used left over turkey meat rather than ground turkey. At the last minute, I couldn't find where I put the raisins, so I left them out. I also couldn't resist adding cheese on top of the potato. The family devoured this one!

Delicious Apple Sauce

Very straight forward - quick and easy. I used my magic bullet - just chopped and put pieces into it with the water. I halved the sugar after reading other reviews and it was still plenty sweet.

Bread Pudding Apple Pie

I'd probably give this a 4.5 stars in reality. But it's a really delicious dessert! I used a shop-bought pie crust, and it didn't cook completely unfortunately, so if I made it again, I might try partially cooking it first. But the filling and topping was really good. The bread pretty much melted and my son who doesn't like normal bread pudding loved this one.

Fluffy French Toast

This French toast really did turn out light and fluffy, and was really delicious. After looking at a whole bunch of recipes, I decided to add some orange juice to the mixture which tasted really nice too. I've never added flour to French toast before but it seemed to turn out really well.

Moroccan Tagine

This turned out to have a delicious taste! I did the vegetarian option, used about five fresh chopped tomatoes, and added a couple of extra vegetables. Served over rice. Very good!

Pierogi Casserole

I'm not sure about how healthy this is, but it tasted good. After reading some of the reviews, the changes I made were (1) adding some shredded cheese to the mashed potato, and (2) adding a cheesy white pasta sauce on to the top layer of lasagne noodles before covering in cheese (to soften it).

Mango Quesadillas

I really enjoyed this. I did make a fair few changes though, mostly because I didn't have all the ingredients. I used real chicken, for one. I didn't have black beans, so used half a can of 'mixed beans'. Didn't have arugula, but added fresh cilantro instead. Also added corn kernals and cumin (because I like it). Only down side is that some of them were a little messy to move without the filling falling out. But good recipe. Loved the mango in it for something different!

Green Chili Chicken Burgers

I followed the recipe exactly except I didn't add as much chili as suggested because I wasn't sure how spicy it would turn out for the kids. Everyone enjoyed it. With the guacamole, I left out the sour cream and replaced it with half an onion which I also added to the food processor. I served with a delicious mango salsa which complimented it perfectly.
