Carrot Rice

I really like plain rice, but I was very impressed with this recipe. The flavors were subtle and not over-powering, yet still very tasty! I made it exactly to the recipe, except that I used a mixture of red and green onion rather than regular. It was a very simple and relatively fast recipe to make, too, which is a bonus.

Red Velvet Pancakes with Cream Cheese Glaze

I don't like red food coloring and had always wanted to try using beet juice in a red velvet recipe, so I tried it with this. Wasn't sure what to expect, but the color was amazing! (See photo.) I cut down on the milk so I could add the juice. I did add a bit of thickened cream though, to thicken it up a bit. I also added some extra sugar, which turned out to be a good idea. I would probably make this again, but add more cocoa to make it more chocolatey. I'll attach a photo to show the amazing red color!

Tomato Zucchini Casserole

A great way to use up zucchinis and tomatoes. Tasted good and looked attractive too. It was also pretty easy to make, as well as being versatile. I made it to the recipe, but I feel I could have added all sorts of other things.

Tomato Basil Squares

Great recipe. Family devoured it. I gave it 4 stars because personally I wasn't a huge fan of the mayonnaise in it... would have preferred a cream cheese base or something like that. Other than that it was a great combo though!

Nicoise-Style Tuna Salad With White Beans & Olives

This was a good base recipe, but to make it five stars, I thought it needed tomatoes - both for taste and color. Also, I used salmon rather than tuna because it's what I had on hand. The fish/bean/olive/onion mix was delicious!

Japanese Chicken Wings

A bit too sweet - one of my kids wouldn't touch it as he said it was too sweet for chicken. I probably should have read some of the other reviews before making it. It was also a bit too greasy and in my opinion there was too much sauce, too. Other than that, it was good for something different.

Zucchini Souffle

I made this exactly to the recipe, except that I grated the zucchini rather than dicing it, and left the peel on. This recipe was quite good, but I just can't not think how much better it would be with some added grated cheese!! I have to say it was a good way to get my zucchini-hating seven year old to eat zucchini without even realising (with it grated).

Basic Crepes

Well, this is a great recipe if you want crepes with pasta-like lumps in them. If not, change the method of the recipe and don't mix the eggs with the flour first! As for the ingredients - that part was great, and when I made them a second time mixing the ingredients differently and it all blended nicely, then the recipe was perfect.

Moroccan Chicken Stew

Delicious - I'll definitely make this again. I served it over Moroccan Couscous, and sprinkled with pomegranite seeds and cilantro. Also, I didn't have condensed tomato soup, so I mixed some tomato sauce and regular soup (made from bouillon powder).

Artichoke and Sun-Dried Tomato Chicken

This turned out great for me. I used fresh chopped tomatoes instead of canned. Also, didn't have tomato pesto, so used basil pesto instead. Also the artichokes I had in the cupboard were marinated in some sort of oil mixture. The final dish turned out to be delicious, and not at all bland like some other reviewers' experiences. I'm not sure if this had anything to do with the different ingredients I used or not. Served it over rice.

Cajun Spiced Roasted Pumpkin Seeds

These were amazing! I am not sure if it made any difference or not but I soaked the seeds in salted water for a few hours before following the directions here. They were perfect, just didn't make enough! I will never throw away pumpkin seeds again!

Green Beans with Cherry Tomatoes

So easy, and tasty too. I used olive oil and then only a fraction of the butter. I also used about half a teaspoon of sugar. I'm not sure why it needed the sugar in the first place. I would leave that out completely next time. Otherwise, great dish!

Greek Salad, The Best!

Delicious recipe. One thing I did change was that rather than two heads of romaine lettuce, I used mixed lettuce greens. Then I only made a third of the amount of dressing (which turned out to be plenty).

Thai Pumpkin Soup

Once made, it seemed to be missing something flavor-wise, or perhaps it was just a bit too subtle. So I used other reviewers' suggestions and added ginger and extra garlic. I also added some peanut butter which I thought was a good addition. I reserved a little of the coconut cream and swirled some of that on top for decoration and sprinkled with crushed peanuts. Tasted good.

Thai Noodle Salad

This was a nice enough salad, but just didn't taste authentic. Had some great ideas, but also a couple of odd ones. Probably wouldn't make this particular dish again, even though everyone ate it.

Soy Milk Pancakes

This was a hit in our house. Loved the almond flavor in the pancakes. I reduced the amount of sugar (which I was happy I did!) and served with maple syrup, crumbled walnuts & strawberries.

Seattle Nicoise

I think it needed more greens, so I added some baby spinach, lettuce and cucumber. I also didn't have that dressing and actually just left it seasoned with the salt and pepper and that tasted really nice. Added some more tomatoes too. I know I used the wrong type of smoked salmon, but I just wanted to try it that way. It ended up looking nice.
