Oat Bran Muffins
Great recipe! For a "Carrot Cake" version, you can make this with the optional raisnins and cinnamon PLUS 1 c. shredded carrot and 1/2 c. chopped walnuts. Makes 10 large muffins. Bake ~17 min. Spread with cream cheese - yummy and healthy!

Chocolate Mint Candies Cookies
I've made these several times. They are easy and delicious! Parchment paper works great. I use a small (~1T) cookie scoop and half a mint per cookie (yields ~6 dozen cookies). Since the cookies are rich, this is a nice size. There are 28 mints in the usual Andes package, so you'll need a little more than one package if you make them this size and use a half mint each. At 10 minutes, they come out a little puffy and underdone-looking, but they deflate quickly and assume a perfect crunchy, chewy texture as they cool.

Wheat Germ Whole-Wheat Buttermilk Pancakes
Great recipe for a slightly more healthful pancake option! These are light (considering the use of WW flour) and very fluffy. I used regular WW flour, which didn't seem to have a negative effect but I'm not sure how they might have been different with the WW pastry flour. Like another reviewer, I wasn't too sure about the 2 tsp of baking soda, so I used one tsp each of baking soda and baking powder. For my taste, I also added ~ 1 T sugar, 1 tsp vanilla, and a pinch of nutmeg. I served these with the recipe for "Absolute Best Pancake Syrup" on this site -- another good recipe.
