Algerian Kefta (Meatballs)

I loved these. I made them exactly as called for - but used minced onion instead of chopped. For the tomato sauce - I got creative and added: 1 can rotel, 1 can of italian stewed tomatoes, sofrito (from the spanish isle), some salsa, splash of A1 bold, a 1/2 lime (squeezed), more sofrito, pepper and some cumin. Sofrito adds a little zip and spice to the sauce, as I did not have ras el hanout. Simmer on low and added on top of the meatballs. It was SO good and my company for dinner that night were AMAZED! This is my new "go to" recipe for meatballs. My FAVE!

African Chicken Stew

I made this during the holidays and it was really good. I did not have pepper flakes nor cilantro - but used paprika, chili powder and cumin. It was really good - surprisingly. I put all the ingredients in the crockpot and let it cook all day - I did not use water, but used chicken stock instead.

Guinness® Corned Beef

I have made this 2x and have learned the following: cook in crockpot, use original guiness beer & cover ALL the meat. I made mine w/o sugar - but added wedged cabbage, whole carrots & wedged carrots - the last hour of cooking - everyone raved. This is Truly a Delicious recipe. Make w/ irish soda bread- found on this site for traditional dinner.

Authentic Kicked-Up Syrian Hummus

I am wolfing this right now with carrots as I write. I LOVE hummus but hate the $$. I made this exactly as wrote and actually doubled the recipe (I heart hummus that much). I made this exactly as wrote and about broke my blender. So instead of adding more oil - I added about 4 splashes of worcestershire sauce and a bit of water to make it creamier. I LOVE the roasted garlic flavor of this and I truly wish I had some red pepper flakes as that would make is SPICY (which I love). I have a bowl I just killed off with carrots and another for tomorrow on my pita with some tobasco! I will never buy hummus again.

Original Irish Cream

I followed this recipe - but changed a few things to cut back on fat and cals. I changed the heavy cream for skim milk, used 1 cup of Canadian Mist instead of Irish Whiskey, and 1/4 tspn. of almond extract as other members have suggested. Needless to say - it was sssooo good - we re making it again tomorrow.

Delicious Black Bean Burritos

I loved this recipe - though I used soaked black beans - instead of can, dashed a little extra seasoning on it and omitted the bell peppers since my family does not care for them. I served mine with cut up avocado for more tex-mex taste and ate leftovers for lunch for a week straight. LOVED IT!!!! Also - topped it with pepperjack cheese and it was SSOO DELISH!!

Restaurant-Style Zuppa Toscana

I make this several times a month - especially during the cold months. I make mine with these small changes: I put bratwurst in mine; omit water - using only chicken broth, 1/2 & 1/2 instead of cream; and spinach instead of kale and use 5 -6 potatoes instead of 2 - makes it chunkier. I also throw mine over a bed of lettuce to boost up the veggies I consume in a day. I LOVE THIS RECIPE!! Can not wait till hubby comes home from war - he will love it but I will throw it in a bread bowl for him.

Army SOS Creamed Ground Beef

My husband is active duty for 20+ years. I made this tonight - as wrote (added a small cube of cream cheese - but I would never tell him) - and he said it was "dead on" what the Army serves. I did use alot of pepper - as that is how he likes his. This is not meant to be a gourmet meal with mushrooms, onions, garlic, etc. It is great if that is how you like it - but soldiers eat it as wrote - bland and all. This is a really good recipe - my hubby said it takes him back to drill sgt. school when after being on the trail for days on in - this was an ultimate comfort food.

Italian Biscotti

Made these tonight. One batch with craisins and another with mini morsels. Ran out of Anise so used orange extract - when it comes to Biscotti - Anise makes it truly better. The logs were really sticky so I had to use extra flour to knead the dough. Overall: these were really good typical Italian Biscotti - not too sweet nor to chewy. Will make these many times over but with Anise.

Shepherd's Pie I

Made this at Christmas eve eve and it was really good. I made the recipe as wrote - exactly. Next time though - I am going to put a few spashes of worcestershire, and red wine along with a few dices (finely) carrots in it. This is a good base to work with though - I truly enjoyed it.

Chicken Enchilada Soup III

I too got hooked on this - and this recipe was very good. I made some simple changes to mine based on the other reviews and my own personal liking. I boiled my chicken in chicken broth (to avoid oil) and then added chopped red potatoes (I like hearty soups) and I used 1 16oz. of velveeta cheese and then topped it with shredded cheese when serving. The one change I would do is 1/2 the Masa and water mixture - to me...it was just too much. I can't wait to make this for my husband when he comes home from war.

Rice Balls a la Tim

I had to add extra seasoning to include italian seasoning to the meat mixture. The balls kept falling apart and rolling in the egg and bread crumbs was a little difficult - but they were pretty good. Tomorrow for lunch - I am sure my family will gobble the rest of them up.

Peach Cobbler Dump Cake I

I followed another reviewer and mixed the cake mix w/ the peaches in the syrup minus 1 cup that I sprinkled on top with slivers of butter. Def. too much liquid with dry spots of mix - so I just stirred it all up. Next time - I will drain the liquid. This is not a cobbler - but a dump cake. And though I had some runny issues - it is really good with Vanilla Bean Ice Cream. My Family loved it & for me, that is all that matters.
