Quick and Easy Mexican Chicken

Reviewed: Feb. 28, 2010
This was really good! Talk about easy to make and quick too! I sprinkled the chicken with garlic powder and browned it quickly on each side not the 10-15 minutes which was mentioned. Then when I baked it I increased the temperature to 400 degrees and baked it for 30 minutes. In another smaller fry pan in olive oil I sauteed minced onion, sliced fresh mushrooms, and slivers of red and green pepper. After putting the chicken in the casserole dish I topped it with salsa, then the onions, mushrooms and peppers. Next I sprinkled the cheddar over all. Talk about a colorful dish! Tasty, too! Delicious over buttered noodles. A dish liked by all and a definite "keeper".

Bow Ties with Sausage, Tomatoes and Cream

Reviewed: Oct. 23, 2008
This is a very tasty recipe. Rather colorful, too for a pasta recipe! I will certainly make it again for my family especially using bow tie pasta. I did, however, bake the sausage first in the oven to make it a little less greasy and fattening. I cut up the sausage into small attractive pieces and added this to the tomato-cream mixture. I cut back on the red pepper flakes and also added minced garlic and mushrooms to the onions. Sprinkling the top with grated cheese and minced parsley completed this lovely pasta dish!

Broccoli Chicken Casserole I

Reviewed: Sep. 24, 2008
I found this to be a very good recipe although like others I did add my own take on it. I preferred baking the chicken breasts in the oven for 30 minutes rather than boiling the chicken for starters. Secondly, I would add more cheese to the recipe and not use the dry stuffing on top. I found it to be much too dry. Perhaps if it was mixed with extra cheese this would make the topping less dry and also more colorful in appearance. I also sauteed fresh mushrooms and chopped onion in olive oil and minced fresh garlic at the end. This added greatly to the flavor. A sprinkling of fresh parsley over the top just before serving added the finishing touch. For extra zip I think I will add French's fried onions to the topping next time!
