Shredded Beef Enchiladas

I'm trying really hard to finish the enchiladas, but the shredded beef is so good - the men can't keep out of it. Will have to try again :) Finally shooed the men out of the house. These were awesome, and my husband/son are picky eaters. Good as given and a great keeper! Thanks for sharing.

Old Bay® Potato & Green Bean Salad

This is really good, and a healthy alternative to mayo-laden potato salads. Definitely a keeper; will make again! I substituted zucchini for the cucumber - either would work well. PS my husband and son hate anything with the word "green" or "vegetable" in it, but they ate this up!

Banana Sour Cream Bread

Fantastic, and I don't bake a whole lot. I used Linda's suggestions with the 1/4 c.applesauce/2 tblspns butter and 1 c. Splenda/ 1/2 c. sugar. Only used white flour. Reallllly good. Cannot believe how good this is!!

Pumpkin Cheese Pie

This came out absolutely wonderful! So easy to bake. I added more spices(allspice, cinnamon, nutmeg and ginger); very happy with results! What's really good with this is some whipped topping to which I added 1 tbspn of cognac.

Crab-Filled Egg Rolls With Ginger-Lime Dipping Sauce

I think I did these wrong, but followed the recipe fairly closely. The sauce was horrible and watery, and baking these produced a floury, really awful tasting item. I don't know what I did wrong. Deep frying would have been a huge improvement.

Shrimply Delicious Shrimp Salad

Really great recipe - I took other user's ideas and cut the shrimp, dried the shrimp well before mixing. I also substituted 1/2 the mayo with sour cream and a tsp of horseradish sauce for some extra kick and used green onionsinstead of white onion. Added some cilantro and a dash of balsamic vinegar. Excellent results!

Outrageous Chocolate Chip Cookies

Recipe was excellent. Previous reviewer indicated that the result was too salty...not my take on this here. I used other reviewer's tips (switch sugar - 1/3 cup and brown sugar - 1/2 cup) for more moistness. Very happy with results!

Macaroni and Cheese V

Really good recipe! I read the reviews and tried the different ideas - more cheese, different varities of cheese (cheddar, mozz, and pepper jack). I also added a 1/2 tablespoon more flour to the sauce to make it thicker, as there's lots of milk in the recipe. I also cut back on the bread crumbs to 1/2 cup. Will make again, and tried the french-fried onions as a topping.
