Lemon Meringue Pie III

Our family swooned over this pie at Memorial Day, calling it the best lemon pie ever. It's not hard to make--I had always been intimidated by lemon meringue, but if you read the recipe through, follow the directions, and get your things together before you start, and you'll do fine. Remember to cool the filling and the crust before you put them together--that way your crust won't get soggy.

Octopus in Tomato Sauce

We made this recipe work, but the instructions were confusing at best. For example, what exactly is "mixed spice"? Sugar is listed in the ingredients but is not to be found in the directions. Still, a good starting point for a great dish. It has a wonderfully complex flavor and we will be making it again. We used paprika, cumin, smoked salt, and smoked pepper flakes in the spice mix, and substituted beef base, sherry vinegar, and a little water for the wine since we live in an alcohol-free household. We zested one whole lemon and a whole orange and didn't use curry powder. We added the sugar in the saute step. The octopus came out with a beautiful texture, which always worries me because I have had some extraordinarily bad octopus. Our kitchen smelled like the briny deep while it was cooking. I was concerned about potatoes in a dish meant to be served over pasta, but it turned out just fine. Fettucine tossed with olive oil was the perfect substrate, then all we needed was a houseguest to torture. "Hey, look, you can see the little suckers on the tentacles..."

Vegetarian Mushroom-Walnut Meatloaf

This was great, but I'm glad a previous reviewer mentioned that worcestershire has anchovies. I checked the bottle in my fridge, and sure enough, not vegetarian. I seasoned the mix with soy sauce instead. I also didn't have any wheat germ or oat bran handy, so I substituted rolled oats for both. Turned out great and was less expensive that way.

No Fail Pie Crust II

When I saw this recipe, I was thinking, "An egg? Baking powder? This is going to be weird." Still, I could tell it was a recipe with a lot of thought put into it and so I gave it a try. It turned out wonderfully well. Even after I was sure I'd overhandled it, it was tender and flaky and delicious. This will be my pie crust recipe from now on.

Cake in a Mug

Try looking at natural foods stores or emergency preparedness stores for powdered eggs or powdered egg whites--then you can add eggs in proportion to what the mix calls for. Mine turned out great this way.

Ladyfingers

Instead of sifting the flour and baking powder together and using a complicated process to combine them with the other mixtures, I just stirred them together with a fork before adding it to the egg mixtures and folding it in. It turned out just fine. I halved this recipe and it turned out exactly enough for one tiramisu.

Slow Cooker Lentils and Sausage

I made a few modifications: I only used one pound of sausage and I added three cloves of garlic, an onion and about 2 teaspoons of dried thyme. It turned out really well, but the lentils could have been cooked longer (I cooked them for 6 1/2 hours on low). We ate it with some crusty bread and red wine. Yum! It makes a TON of stew, so I will cut the recipe in half next time. It makes a great lunch to take to work. I will definitely make this one again!

Roasted Vegetables

I made this dish for Christmas. I ended up sauteeing the veggies instead of roasting them (the oven door came off--don't ask). I also like to add beets, so they've been given the nickname "Pink Veggies" at my house.

Vegan Taco Chili

Tastes great, if a little high in sodium. This is a great thing to leave in the crock pot all day and have ready when you come home. The leftovers freeze well, too.
