All-Around Good Smoothie

Reviewed: Oct. 14, 2012
Great smoothie recipe to use as a guide for whatever one has on hand. I used almond milk, maple syrup instead of honey and I used whole grass fed Greek yogurt and some lime juice to give it a little tang. I didn't use the protein supplement or flax seed. Used a sprinkle of poppyseed instead as that's what I had on hand. Also added a few ice cubes to thicken it a bit. Turned out delicious!

Carrot Banana Bread

Reviewed: Apr. 25, 2009
I cannot eat dairy or soy so it was wonderful to find a recipe without milk or butter. It was delicious and moist. I added 2 T of steel cut oats instead of nuts. Next time I will try cutting back on the sugar and add a little wheat germ and/or whole wheat flour in place of white flour for extra nutrition. We always seem to have bananas that get too ripe so I will make more bread to put in the freezer.

Scalloped Potatoes and Onions

Reviewed: Feb. 10, 2010
I am lactose intolerant and it is hard to find a recipe without milk, cheese or cream of (fill in the blank) soup. This is perfect. Delicious, nutritious and easy to make. Didn't need to change a thing!

Angela's Easy Breaded Chicken

Reviewed: Apr. 25, 2010
I am gluten intolerant which means I can't eat anything with wheat, barley or rye. So I marinated the chicken in my own home made gluten-free salad dressing and before cooking I dipped in a gluten-free bread crumb + chopped almond mixture. The last 10 minutes I turned the over to 400 degrees. Chicken came out delicious. My husband love it too!!

Extra Easy Hummus

Reviewed: Dec. 8, 2010
Modified as others have done. Added 1 T fresh lemon juice, only 1 teaspoon cumin, added a few shakes of Southwest seasoning for flavoring (ancho pepper, onion, garlic, Mexican oregano, cayenne pepper chipotle & cilantro). Also added 1/3 cup shelled, roasted pistachios which gave it a great flavor & texture. Delicious!!

Cobb Salad

Reviewed: Oct. 1, 2012
Excellent and satisfying dish. My husband loved it. I used grass fed bacon without additives so I could say it was a healthy dish. I've been reading lately that fat is actually good for us, in moderation of course. Unfortunately, I didn't have an avocado on hand. Used olives instead. This recipe would work for a "salad in a jar". Put the dressing of your choice in the bottom of a quart jar, then the tomatoes, then onion, then avocado. Sprinkle a little lemon juice over avocado to prevent browning. Add egg, then bacon and top it off with your choice of lettuce. Beautiful! And delicious & healthy too!
