Southern Apricot Chicken

Great, easy recipe! Even though I followed the instructions to the letter I thought the finished product looked really bland so I drained a can of sugar-free apricots and sprinkled over the top then put it under the broiler for 5 minutes. Also we served it with whole wheat couscous and drizzled some of the sauce over it, making for a healthy, tasty, healthy and attractive dinner. Will definitely make this again with the changes noted.

Gram's Persimmon Pudding

We have a persimmon tree so I'm glad to find another good recipe. The only problem is this was far too sweet. I would add just 2/3 cup of sugar. Also, it overbaked on the outside. I might try baking it in a waterbath next time.

Creamy Caramel Flan

This is a wonderful recipe! I made a low fat version by substituting lite cream cheese, non-fat condensed milk, and low-fat evaporated milk. It still had lots of flavor and smooth texture.

Lemon Zucchini Bread

I grow zucchini in my backyard so this is a fantastic way to use it! I made it a lot healthier by using egg substitute, substituting the oil with organic applesauce, and using organic whole wheat flour and sugar, and adding walnuts. The nuts and whole wheat give it a nutty flavor so you don't need all that oil. This healthier version has gotten rave reviews.

Mari's Clam Lovers Chowder

The actual soup was great but it makes a lot more than 12 servings; more like 24. We had so much leftover we had to freeze it. I suggest cutting it in half.

Rosemary-Lemon Roast Chicken

Delicious yet so simple. I like a stronger flavor so I doubled the rosemary and garlic and made a rub with the salt. It's a big hit in our family!
