October Oatmeal Pumpkin Muffins

Excellent! I loved the base of the recipe. I made substitutions/additions based on our lifestyle: Substituted egg whites for eggs, water for milk, brown sugar for white sugar, old fashioned oats for quick oats, molasses for maple syrup. Added 1 tsp vanilla, 2 scoops protein powder, 1/4 cup each ground flax and chia seeds and 1/2 cup chopped nuts.

Coconut Poke Cake

Outstanding! I make a version of this recipe only using 1 can sweetened condensed milk. Once cool, I spread raspberry preserves on top then frost with cool whip and coconut. YUM!

Boston Cream Pie II

This is the same recipe as in my old Betty Crocker cookbook. Excellent flavor and easy to make. The only thing I do different is add a tablespoon of butter with the vanilla once the custard is cooked.

Incredible! I changed a few things to my own liking, but overall the same (if that makes sense). I pre-baked my pie crusts. (brush frozen pie crust with butter, prick crust to prevent bubble, bake as directed on pkg) I also reduced sugar to 1 1/2 cups, increased vanilla to 1/2 tablespoon, instead of using a whole pkg of coconut, I placed a couple handfuls into the bottom of the baked pie crust, then poured the filling over the top. I baked it for 20 min @ 400, then reduced heat to 350 and baked the remaining time. Perfection!

Copycat Recipe For Lofthouse Cookies

These are really quick and easy to make. I rounded the shortening up to 1/3 cup. They need to bake the whole 10 min, I then sprinkled them with powdered sugar. 1 tablespoon size cookie is about 55 calories.
