Salsa Chicken Rice Casserole

This was delicious. I have to say I didn't make it according to the original post, but wow, my whole family just inhaled it. I took the rice down to 1 cup and took the water down to 2 1/4. I opted to cook this on the stove top. I added garlic and pepper. I cut the chicken into chunks and sauted this in a tiny bit of olive oil with 1/4 tsp. cumin until it was almost brown and then added 1/2 chopped green pepper, 1/2 red pepper, 1/2 onion and 1/2 fresh mushroom. I kept the original cheeses and the original amounts. I added the cream of mushroom and omitted the cream of chicken. I just threw everything together in the 9 x 13 in dish and just stirred it all together. I baked for 20 min at 350 degrees. My kids even went nuts!! Thanks for sharing!! This would be great with almost any veggie combo. I'll be putting broccoli in next time and my children have requested this with peas!!

Goulash Supreme

This was very good. Only change I made was I replaced the paste with tomato soup. I like it with a little less tomato flavor and this helps it from being so rich.

Easy Sausage Strata

Chicken Scampi II

Wonderful recipe!! The whole family really enjoyed this. The chicken was so flavorful and yummy. I served it with angel hair pasta. The only thing I did differently was to cut the butter and oil almost in half and there was still plenty of sauce to coat the noodles. As other users suggested I also doubled the lemon juice. Very, very good and quick to make. Not a lot of dirty dishes makes clean up a snap!!

Iced Pumpkin Cookies

These were just awesome! They got rave reviews either plain or iced. My children absolutely loved them. I did find the baking time to be a little too long as other reviews had mentioned, but the flavor of them still deserves 5 stars!!!

Chicken Alfredo with Fettuccini Noodles

I found it to have a grain like texture and lacked that creamy alfredo consistency. We also thought it was a little bland. It was very easy to make, but we will not be making it agian.

Chocolate Surprise Cupcakes

These cupcakes are amazing!!! My girls 3 and 7 and I made these the other day. They loved helping mom and these were so easy. I did lower the oven temp to 325 and I did a layer of chocolate, then the cream cheese mix then topped with the chocolate as suggested by other reviews. These were fantasitic. I even did some with cashews and others with walnuts for my husband. They were a huge hit here. I got 24 exactly. Thanks so much for this great recipe!!

Delicious Easy Chicken Francese

This recipe is insane. The whole family went nuts over it. Even my picky 5 and 2 years old went nuts with a little Parm cheese on top, yum. I've never eaten this dish out anywhere let alone make it. I was not at all disappointed. I did make few adjustments as other users suggested. I used 1 egg and beat it with 1 Tbsp milk for the coating and there was plenty to do 4 skinless boneless thin chicken cutlets. It cut down on the egg taste, but still cooked and browned beautifully. I don't keep lemons on hand so I substituted 4 Tbsp lemon juice. I did end up using about 5 tsp cornstarch mixed with 5 tsp water to get the sauce to thicken right, but remember as the sauce cools it does slightly thicken. I added garlic to the sauce as well. I did not bake this dish I opted to dirty several dishes on the stove top instead. I sauted the chicken with 1 Tbsp olive oil and just kept turning it. When it was almost cooked I turned the heat down. It came out very moist this way. I made my sauce in a separate pan. I also used other suggestions to serve with angel hair pasta and broccoli. I placed the pasta on each plate and dotted with butter, encircled the pasta with the broccoli, placed the chicken on top and then spooned sauce over the top of each one. It looked great and tasted even better. This recipe is a new family favorite!!

Mozzarella Mushroom Chicken

I took the advice of other members and added about 2 Tbsp white wine and added a couple pinches of parsley and oregano. 1 cup of cheese per chicken was way too much. I took the drippings from the chicken and added chicken broth and a little cornstarch to make a gravy. I then cooked the mushrooms in that sauce. I thought with the extra stuff it was ok and my fiance was less than enthused. The kids didn't care for it either. It started out smelling great though. Without the gravy it would have been very bland.

Mozzarella Chicken

This recipe has fast become a family favorite. I use a little extra mozz cheese, but other than that I follow the recipe exactly. The only thing I've noticed is to make sure the wine you use isn't too strong or it over powers the dish. I make this dish about once a month for my crew!

Rosemary Sherry Pork Chops

The pork was very flavorful and moist and the sauce was delicious!! My boyfriend absolutely loved it and he's super hard to please because his parents own a Country Restaurant. I made a few minor changes. I cut the amount of oil in half per others suggestions and I used Extra Virgin Olive Oil instead of vegetable. I also used dried rosemary instead of fresh because that's what I had on hand. I served it with Cream Cheese Mashed Potatoes and Parmesian Asparagus. I will definately be making this again...yummy!!
