Savory Garlic Marinated Steaks

Reviewed: Jan. 17, 2006
We've now made this several times-both with NY strips (which were excellent) as well as Ribeyes (wonderful as well). We LOVE this recipe, as does everyone who we grill it for,and they always ask for the recipe. My husband likes it with the Ribeyes better (I don't usually care for them) and I like it with NY strips better. We always take care to tenderize the meat well and they turn out wonderful and tender every time. Sometimes I don't have as much time to marinate them and end up doing it around 7 or 8 hours, but they always turn out great! Thank you!

Slow Cooker Thai Pork with Rice

Reviewed: Jan. 27, 2006
I was excited about this because I spent some time in Thailand and was looking forward to some authentic tastes. I was disappointed. I couldn't find teriyaki sauce with no sodium (I could only find low sodium) so maybe that's why we didn't like it, it was really salty tasting (that was my fault) but we didn't like the overall taste anyway. My husband and I decided it was just okay, sorta bland, and we won't be trying it again. Everyone's tastes are diffent, though, thanks for the easy recipe.

Spinach Tomato Tortellini

Reviewed: Feb. 1, 2006
This was wonderful, and super easy! I didn't have much time before my husband came home, and it turned out perfectly! I did substitute half and half for the heavy whipping cream (used just a little bit of whipping cream to try to make it lower fat) and I think next time I will use even less half and half, no cream, and more milk to make it even more healthy. I added some fresh chopped mushrooms as well to the sauce, along with some chicken. I also used frozen tortellini, and it was ready in even less time. My husband devoured it. :) We had garlic bread as well, and it was yummy to dip in the sauce. Thanks!!

Cheddar Bay Biscuits

Reviewed: Feb. 8, 2006
I loved these biscuits! My husband told me they were absolutely outstanding-I added a little seasoning to the biscuit mix prior to baking, but I don't even think they needed it. Great, simple recipe! I have also made these using low-fat Bisquick....don't do it. The consistancy is not the same as the regular!

Swiss Chicken Casserole I

Reviewed: Feb. 17, 2006
Mmmmmmm. :) I made this for my husband, hoping that it was similar to one that I'd received from a kitchen business....and he loved it! I changed it a wee little bit. I put the cream of chicken in a bowl, and used the can to fill it up with 1/3 milk and 2/3 white wine. I just used some leftover dry stuffing that I had on hand, so I don't know, it may have been more than 8 ounces, use your judgment on liquid depending on how much you use and how moist you want it. I also put in some herb and garlic seasonings in the dish with the liquid. I thought it would be sorta bland without it. When I poured it over the dish, I pushed the stuffing down underneath the liquid, because I didn't want dry stuffing and I didn't use the butter (I just used a wee little bit on top instead of what the recipe recommended, I'm trying to cut out some fat from our recipes). It was wonderful! I only gave it four stars because I altered it. Next time, I think I'll put fresh mushrooms in it as well.

Jen's Fresh and Spicy Salsa

Reviewed: Feb. 17, 2006
Wow. That is definitely spicy. I wish I could give this a 3.5, because it wasn't my favorite as written, but it could be quite adaptable. I cut back on the green onions as well because I thought it would be too much for us (I only put in 5, and both my husband and I thought the onion flavor was still too overwhelming). But I do like the flavor of it, so I think next time I'll only put in one green onion and not put it in the food processor (we thought it was too potent chopped in there) along with some sweet onion instead for the texture. I also only put in one jalopeno, and not as much hot sauce, and less salt and pepper because I knew it would just be too hot for us. Thanks for the great recipe! I plan on adjusting it to our tastes and making it often!

Mushroom Pork Chops

Reviewed: Mar. 1, 2006
My husband loved this! I did make some changes based on reviews. I tenderized the chops, rubbed in seasonings & browned them in a skillet with oil. I sauteed onions w/ fresh garlic & then added them to the chops. I increased the soup to 2 cans & added white wine & milk (I really felt that gave it more flavor, thank you to the reviewer who recommended that!) I poured it over & also added fresh mushrooms (I didn't saute them simply because my husband brought them home with him). They turned out really well...I simmered it for a good 30-40 minutes. I made mashed potatoes with it, and used the leftover mushrooms and onion to saute with some green beans and garlic. The only thing I may try next time is a marinade before browning the chops to give them even more flavor. I gave it a 5 because it's a wonderful base recipe that can be tweaked to your liking, I'm not sure if I would have liked it as much without the changes, though. Great meal idea, super easy and adaptable, thank you! :)

Bourbon Street New York Strip Steak

Reviewed: Mar. 1, 2006
We thought this was good, but not amazing. Maybe because we're not huge fans of bourbon, I don't know. The flavor was a bit much for us. We prefer the savory garlic marinated steak recipe on this site. But it's still a great marinade and it was nice trying something different. Thanks! :)

Sweet and Sour Pork III

Reviewed: Mar. 7, 2006
I made this last night...nice and easy recipe. I used chicken instead of pork and pan fried it as well instead of deep fat frying it, and it turned out fine. Probably not as yummy as deep fat frying but a little healthier I guess! :) My husband loved it! Thanks for the great recipe!

Purple Apple Slaw

Reviewed: Mar. 17, 2006
We thought this was really good, and we're not huge coleslaw fans (I only made it because I had cabbage to use up and didn't know what else to make!) :) I did add extra apple (1/2 of a green one, personal preference) and a little more cabbage just based on how thick the dressing appeared. One thing to note-maybe this is obvious, but we ate it a few hours after it had been prepared, and the flavors hadn't blended quite as well as I would have liked yet. We both thought that it was much better today! (a day later) I may put a little less mayo in next time, but that's just personal preference. I also used plain green cabbage, and it tasted wonderful as well. Thanks for an easy recipe!

Saucy Chicken Cordon Bleu

Reviewed: Mar. 17, 2006
We thought this was pretty good. I had to change the sauce quite a bit since mine turned out really thick initially, I added more wine and a little milk. (I ended up adding too much, and added flour to the sauce at the end to thicken it up a tad). The sauce was okay, but we both felt maybe it was unnecessary calories (wasn't incredible enough to warrant adding it). We both thought it was great, though, and I will probably make it again without the sauce for a more crispy traditional cordon bleu. Thanks for an interesting twist! :)

Betsy's Poppy Seed Chicken

Reviewed: Mar. 21, 2006
I changed this quite a bit because I wasn't sure how it would taste without adding a little more flavor. I added some milk and wine to the sauce... sauteed the chicken breasts with onions, celery, garlic, and mushrooms (then added them to the sauce)...added some salt and pepper...used garlic ritz crackers, etc. All in all, it was pretty good, and easy....after all, it is canned soup. :) Thanks.

Chinese Chicken Salad II

Reviewed: Mar. 24, 2006
I thought this was really good...I loved how easy it was to put together, I needed a really fast salad for a Chinese dinner I was putting together that used up ingredients that I had. Although I thought it was really good, my husband just thought it was "okay" so I probably won't make it again. But thank you, I thought it was great! :)

Belle and Chron's Spinach and Mushroom Quiche

Reviewed: Apr. 10, 2006
This was really yummy....I sauteed the mushrooms and onions for a really short time to help eliminate crispiness based on other reviews. I decreased the ingredients as well because I knew it would be way to much for even my deep dish pie pan. I still had extra. I used a package of frozen spinach, and next time I think I will use less as it overwhelmed the quiche somewhat. I will definitely make again and tweak to our tastes! Thanks.

Sausage Casserole

Reviewed: Apr. 10, 2006
This was great! I used frozen shredded potatoes. I cooked the onion with the sausage since I don't like crunchy veggies. I used some colby jack along with chedder as I didn't quite have enough. I think I would also add some pepper and salt to the mix or some type of seasoning, as I felt it needed it afterwards. I might also add other veggies. Everyone enjoyed it! Thanks!

Fried Rice with Cilantro

Reviewed: Apr. 12, 2006
I thought this was very authentic tasting. I didn't have cilantro, and it still tasted wonderful, so I can only imagine that would improve the taste immensely. My husband was very impressed with it....and my kitchen smelled like downtown Bangkok, Thailand, for the next day or two (probably due to the fish sauce!) :) Next time I may decrease the amount of fish sauce just a little bit for personal preference, it was a perhaps a little overpowering for me personally (although my husband would disagree). I'm just not crazy about it, I hate the smell, but it's often necessary for many Asian dishes! :) Oh, and I also didn't have any green chili's so I used red Thai peppers. Great recipe!

Sour Cream Chops

Reviewed: Apr. 12, 2006
I feel awful that I'm in the minority here, maybe I did something wrong, I was quite surprised that it didn't have more flavor than it did. Although my pork chops were nice and tender, I wasn't really impressed with the sauce. It may have been the cream of chicken, maybe the brand I used, I'm just not sure, I followed the recipe to a 'T' and thought I'd love it. My husband enjoyed it, but he will generally eat anything. :) Sorry that I'm in the minority! Maybe I'll try it again and see what happens.

Betsy's Mandarin Orange Salad

Reviewed: Apr. 12, 2006
This is one of the best salads I've tried on this site-I loved it as did my husband. Surprisingly, I loved the almonds and I typically hate them. I didn't add the celery (personal preference), used green lettuce rather than red, and halved the entire recipe. As most salads of this sort (in my opinion), it doesn't necessarily keep very well so don't toss the dressing until you're almost ready to serve. Wonderful! Thanks! :)

Chicken Fettuccini Alfredo

Reviewed: Apr. 13, 2006
I rated this a five, because I felt the flavor was outstanding...I followed the recipe exactly except I put in less salt (I tend to do that especially with sauces, since I hate it when things are too salty and I can always add more) However, my sauce was way to thick to even really spoon over the fettucine, so I added extra milk to the mix (it still turned out quite thick). I think maybe next time I'd put in less flour since we like a medium thickness to our sauces. And I think I may try some other Italian cheeses next time as well. Excellent flavor, though, my husband loved it! Definitely a keeper!
